Banana-Nut Corn Bread

Reviewed: Sep. 30, 2008
So goood!!! I was actually looking for an easy banana bread recipe. I made muffins and added a couple tablespoons of honey for sweetness. I can't believe how amazing these taste! I didn't mash the bananas ahead of time. I just cut them into small pieces and mashed them into the corn bread mix. It turned into a nice batter. I halved the recipe and added water since that's the kind of cornbread I had on hand.

Sausage-Stuffed Loaf

Reviewed: Jul. 9, 2008
So good. I cooked it in a loaf pan. I used fresh spinach and minced garlic because that is what I had on hand. Also I didn't use any cheese--it still tasted great!

Chris' Bay Area Burger

Reviewed: May 8, 2008
I did not expect these to taste so great. I halved the recipe and eyeballed the ingredients. Used minced garlic--probably about a tablespoon. Added dried onions and subbed 3 grinds of sea salt for the salt because that was what I had. Also used fresh ground pepper. We only had coney island hot dog rolls so I made them to fit in the buns and grilld on the Foreman. Tasted great with dijon mustard. I could definitely serve this for company and my picky 5 year old loved them too.

Surprised at how good this was. Even my picky five year old daughter ate all of hers, and that is the highest compliment. Didn't think she would because she saw me put the apple sauce in!

Leslie's Strawberry Breakfast Chops

Reviewed: Jan. 5, 2009
First let me preface this with the fact I was super distracted. I was going to make sage pork chops, but I grabbed the curry powder and sprinkled it on the meat. Once I realized, I put sage and sea salt on top of it. I had some black cherry fruit spread and saw this recipe. Since the pork chops were already cooking, I just dumped the fruit spread in the pan with minced garlic. I put in a healthy amount worcestershire sauce on accident. I noticed the label when it back in the fridge! So I poured the soy sauce right in on top of it. With all my distraction, the chops still came out amazing!

Baked Chicken Nuggets

Reviewed: Sep. 16, 2006
I was surprised how crisp these came out. They were very good. I sprayed a little cooking spray in the pan and it kinda fried the bottom, which was good I thought the bottoms would get soggy. I left out the extra spices because my bread crumbs were flavored. I used the kind of parm cheese that is dried and grated, not the crumbly kind. Overall excellent, I think these could be used in a number of italian dishes too, like chicken parm or even chicken alfredo.

This was absolutely delicious and quick. I used spicy tomato chicken sausage, fresh linguini, and frozen peppers and onions and the flavor was phenomenal. I used about 1/4 cup of marsala. I must have ate about half of the pan by myself. I will definately make this again.

Quick Peanut Butter Cookies

Reviewed: Oct. 16, 2005
This recipe is excellent. It really took no time at all. I used it as an activity for two three year olds. I made the batter and then used a rounded tablespoon measuring cup sprayed with pam to scoop the batter onto the pan. Then the kids used the shallow cookie cutters that were on the bottom of my measuring cups to lightly press the cookie balls down, so that the cookie had a small heart shaped indent in the center of the cookie. Before putting them in the oven, I sprinkled a pinch of granulated light brown sugar over the tops of the cookie. After taking the cookies out of the oven, I drizzled Smuckers butterscotch sundae topping over the entire pan. The kids loved them and my neighbors couldn't get enough!! Thanks Vicki!

Alfredo Sauce

The sauce came out excellent. I followed the recipe closely except I used 3/4 cup of cheese and dried parsley instead of fresh. I also added nutmeg and fresh ground pepper. I served it with Buttoni fresh tortellini, my boyfriend loved it and I had two platefuls. Delicious!

Avocado Quick Bread

Reviewed: Jun. 14, 2005
I made this two times. Both times I only had one avocado. The first time I just substituted banana and the second time I used ripe plantains (the peel is completely black). The plantains in the bread added a nice complement to the avocado. One of my favorite recipes. My neighbor has been bugging me to make it again!

Carrots with Dried Cherries

Reviewed: Aug. 31, 2007
I haven't been eating my veggies lately. Tried this recipe, very good. Used craisins and didn't have honey so used brown sugar. Yum. Also, I don't like cooked veggies so much so I just melted the butter and sugar, added the craisins. I let that cook into a sauce and just tossed the baby carrots in the sauce. Not sickening sweet at all, nice compliment to the carrots. Definitely will make again!

Dutch East Chicken Wings and Rice

Reviewed: Aug. 25, 2007
This came out excellent. I didn't have any tomato soup, just used a can of tomato paste watered down. Also didn't have any tumeric so I substituted with onion and garlic sazon. For the rice, I used whole cloves and subbed the almonds for craisins. I also used basmati and the rice came out subtle sweet. Overall, I loved the dish and it was easy to make. Next time I might try to make the chicken in a slow cooker.
