Candy Cane Fudge

Didn't really care for this. I thought it was chewy, not like my reguar fudge recipe using marshmallow fluff. Unwrapping the candy canes was also very tedious. Sorry...

Double Tomato Bruschetta

WOW! This was AMAZING! I made it for New Year's Eve and will definitely be making again. Since I had to transport it, I made it into more of a dip (skipped the Mozzarella and added a Parmesan/Italian blend cheese right into the mixture). And definitely go FRESH with all your ingredients...MMM, MMM GOOD!

Peanut Butter Temptations II

Mmmmmm...these were so good - I had to make them twice they went so fast! Followed recipe exactly except when it came to cooking them. I rolled dough into 1 inch balls and placed in mini muffin pan. Next I pressed a PB cup in the middle (dough will surround PB cup perfectly) and baked them for exactly 8-1/2 minutes. I got 48 tarts out of this recipe.

These are awesome! I too use the round waffle pretzels (Rold Gold) with Rolos and they turn out perfect! They look so neat and elegant. Don't forget to toast the pecans beforehand!

White Chocolate Snack Mix

Just made this for a holiday party - YUM, YUM! Instead of toasted O's I used 2 types of Chex mix and instead of white chocolate chips I used almond bark - so much easier! Great for any party where there'll be kids!

Chocolate Pretzel Rings

I have another version of these (takes a little more effort but I like the presentation better) - I make them with WHITE CANDY COATING - melt the candy coating, pour it into a plastic bottle (cut tip slightly bigger for quicker pouring) and squeeze into each preztel round. Top with M&M. These are always a big hit and make great gifts year round!!

Alyson's Broccoli Salad

I hate broccoli but LOVE this salad (actually I've only ever had broccoli cooked, never tried it raw because I disliked it so much cooked)!! A neighbor of mine (who's a chef) made this salad over the summer and I've been looking for the recipe ever since and this one ROCKS! I added more broccoli and onion than what it calls for (3 heads, chopped finely and 1/2 an onion), used Splenda instead of sugar, and red wine vinegar instead of white because I didn't have any. I mixed everything together and let it sit overnight. AWESOME SALAD!!

Marshmallow Brownies

I made these all summer for various events/occassions and they are always a big hit - everyone loves them!. I think they are more of a bar cookie than a brownie though. Followed recipe exactly except I cooked 350 degrees for 25 minutes. They need to set up so don't get alarmed if they don't look done when you take them out.

Cranberry-Jalapeno Relish

I made this for Thanksgiving and again for a Holiday party recently. I served it as "Cranberry Salsa" with tortilla chips. I received many compliments on it. It's a sweeter salsa. I didn't change a thing (other than double the recipe the 2nd time I made it).

Mexican Bean Salad

Fresh and Fabulous!! I made this for the 4th (Mexican food theme) and all but about a cup of it was left. It was soooo good! The only thing I might do different next time is wait to add the dressing (I liked it better fresh) OR cut back on the vinegar a little bit because I made it the night before (to marinate) and served it the next day and I thought the vinegar taste got a little stronger. Either way it was still so yummy!

Cheese Ring

I made this the other day for a Mardi Gras get together and it was a hit! I added 1/2 cup chopped pecans but otherwise I followed the recipe exactly. I used an 8" cake pan that I lined with wax paper, mix everything up (except jam), poured it in and left to sit overnight. When I was ready for the party, I inverted it onto a large plate, topped with the rasberry jam (I thought it would be prettier and easier to eat this way) that I surrounded with Wheat Thin crackers. Super easy and tasty too!

Roasted Red Pepper Dip I

I've made this twice now and really enjoy the taste - although I would call it SALSA, not a dip. The first time I processed the ingredients in my food processor/blender as stated and found this step uneccesary (became too liquidy) . The second time I did not use the food processor/blender - just chopped up the red peppers before cooking (everything else is chopped already) - the results were a mildly SWEET tasting salsa. Easy and delicious.
