Simple Roasted Chickpea Snack

Made these for book club meeting and they were a real hit! I did make several mods though based on several of the reviews and some other versions of the recipe I read. First I drained and rinsed the chickpeas and then left them out to dry on paper towels for about 30 minutes. Then I baked them on 400 for 15 minutes with no seasoning or oil. After first 15 I tossed them in the oil and spices (I added 1/4 tsp cayenne and some garlic salt too). Finally baked another 15 minutes. They were crunchy and yummy!

Slow Cooker Chicken Marrakesh

I made this and as recommended by several I added about 1/2 cup chicken broth and doubled the spices. The flavors were great but my sweet potatoes were almost mush. I think next time i will either cut them bigger or else I will consider layering differently so that the chicken is in the broth more than the potatoes... But overall it was a hit and I will make it again with a few tweaks.

Big Ed's Cajun Shrimp Soup

This was excellent and will be made again. I made a few modes based on personal preference and other suggestions. I left out the bell pepper (pers pref), use low sodium V8, and added a 10 oz can baby clams and 8 oz can oysters. I would leave the oysters out next time as I didn't think their texture worked great, but otherwise I followed recipe as is and my husband loved it!

Baked Zucchini Chips

Tried this tonight. Based on various reviews made a few small mos.. Add I tbsp more parm and 1/4 top garlice powder. It was still only ok. Will try it again, but it needs more flavor int he breading...

Easy Indian Butter Chicken

I made this exactly as written (minus the onions, personal dislike) as a birthday meal for my husband. It was a huge success! Served it with basmati rice, creamed spinach and naan. Yummy! The only critique I would give is that I had way more sauce than necessary for the amount of chicken. I could have easily added half or more again of chicken. But I will definitely be making this again!

Cream Peas

I found this to be a bit bland and pasty tasing. Rest of the family (husband, FIL, and MIL) liked it though. Personally, I'd prefer plain peas next time though.

Peanut Butter Cup Cookies

I cheated and used refridgerated pilsbury peanut butter cookie dough. I also used dark chocolate Reese's cups. Followed the suggestions to freeze the cups and refridgerated after coming out of oven... But first batch fell apart when removed from pan. The tasted GREAT though. So for the next batch I cooked for 9minutes and they were just right! Maybe because I didn't use the recipe dough it took a bit longer to cook. Will certainly make again!

Pumpkin Brownies

Made a double batch in 9x13 pan. Left out cloves entirely and followe some reviewer suggestions to leave more batter for the chocolate than the pumpkin. Just did two layers chocolate on bottom and pumpkin on top then swirled a lot with spatula. Tuned put gret!

Hash Brown and Egg Casserole

This was excellent! I did make a few adjustments based on a few reviews, but I suspect even without them I would have been happy. I made this in a 7x9 casserole pan with about 1.5 pounds frozen shredded hashbrowns and used 6 eggs. I also omitted the onion (personal preference). Otherwise followed it as is and it was a hit with my husband and I. We divided it into 8 portions - they looked small but they were dense & filling. Took them to work for breakfast each day for the week. Just right!

Chicken Taco Filling

Second time I've made this. Was really good the first time but this time I made it with 1 pound chicken tenders and one pound boneless skinless thighs, 2 cups low soiums broth (to reduce sodium level) and one packet taco seasoning. Turned out excellent!

Quick Chicken Piccata

Pan-Seared Tilapia

Recipe was quick and simple, but needed a bit more flavor. Will probably try it again, but adding some additional spices to the seasoning (either on the fish directly or else in the flour). I'm thinking along the lines of garlic powder, onion powder, maybe just a little red pepper....

Crawfish Bisque

Made this tonight and it was a hit. I had 12oz of frozen crawfish meat so I added about half a pound of shrimp cut up into small pieces. Served it with sourdough bread. Agree that if I'd had some seafood stock it would have been even better, but all in all it was really good and really easy! I'm guessing the warmed up leftovers will be even more flavorful.

Spicy Orange Beef

This was a big hit in my house! I skipped the orange peel as suggested by other reviews and rather than sautee the garlic and ginger, i just mixed them into the sauce mix and poured it all in at the same time. I made 1.5x the sauce beacause I had about 1.5 lbs of round steak but I don't think I really needed to, it was plenty of sauce. Could have been a bit thicker for presentation sake, but I will definitely be making it again!

Fantastic Crab Dip

Was a hit at my book club meeting. I skipped the copped onion and used onion powder instead (personal preference). Also used real crab meat instead of imitation. It was really good, but could have used a bit more 'kick'. The leftovers were even better after having set even longer.

Quick Alfredo Sauce

Quick & easy recipe that turned out yummy. Served it with some leftover baked chicken breast diced into it and over pasta. I followed a few suggestions of others and a few mods of my own and it turned out great. I used FF Half & Half, reduced the flour by 1/2 and increased the Parmesan to 1/2 cup. Added 1/2 tsp black pepper. Also added the minced garlic while melting the butter so that it sauteed just a bit.

Baked Buffalo Wings

I followed the suggestions to thoroughly dry the wings before coating them and also let them sit in the fridge for about 3 hrs rather than only 1. While that seemed to work great the only issue I had was that after flipping them half way - may of them were stuck to the foil when it was time to take them out. And when I took them off - the coating stayed on the foil... Only modification I made was rather than put them in the sauce before cooking - I tossed them in wing sauce after. The flavor was great and for those where the coating didn't stick to the pan - they were very crisp. Will try again and maybe this time re-spray the pan with cooking spray when I flip them.
