Cream Cheese Chocolate Chip Bars

Ok, I think this the trick: 1. Use a 17" x 11" pan (then the cream cheese egg layer isn't too thick) 2. Use only 2 eggs for the top layer. 3. Bake @ 350 for 40 minutes. 4. Omit vanilla 5. I used less choc. chips

American Lasagna

Delilah's Frosted Cut-Out Sugar Cookies

This is a great sugar cookie recipe! I had better success cutting out shapes by using alot of flour on my rolling surface and cutters. Good flavor, although not the recipe for you if you are planning to skip frosting, they would be too bland.

Buffalo Chex® Mix

This is our favorite snack! I always get asked for the recipe. Try using Synder's of Hanover "Hot Buffalo Wing" pretzel pieces for some extra kick. I cut the hot sauce down to just a tablespoon, still hot but not so overwhelming. I use Hidden Valley dry ranch mix and definitely DO NOT leave out the celery seed, it makes this great. For perfect texture the trick is to bake the mix. So preheat oven to 350. Mix together cereal, pretzels, goldfish. Melt butter in microwave then stir into it the last three ingredients (1 tbs. hot sauce though). Pour over cereal mixture, stir. Bake in a deap BIG pan for 15 min, take out stir throughly, then bake for 15 more. Take out stir and allow to cool completely. This stuff rocks!

Old Fashioned Potato Salad

Substitute plain greek yogurt instead of mayo for a lowfat, protein enriched version. chopped pickle is also a a good swap for relish, and a lower glycemic option. (less sugar) You can also just microwave your potatoes for quicker (cooler) prep. Just put your potatoes with a tablespoon of water in a big microwave safe bowl and cook on high 5-7 min (depending on size of your spuds)

Too Much Chocolate Cake

You can never have too much chocolate! Baked this today (for my bday) in two 8" rounds and it came out PERFECT! 35-40ish min at 350 did the trick. I cut the oil in 1/2 as other reviewers suggested, next time I will use 3/4 cup. I also used Ghiradelli mini chips, which was excellent and distributed evenly throughout the batter, and frosted with a buttercream I added just a little cocoa powder to. My kids said "BEST CAKE EVER"!

Potato Chip Chicken Casserole

You can make this recipe lowfat and add nutrients by substituting cornflakes (5 c. slightly crushed, melt 2 tbs marg, shake in ziploc bag together). I also add 1/2 c. slivered almonds to cornflake mixture to give casserole more crunch. Use lowfat mayo and BROWN rice. Yum!

Orange Cranberry Simple Scones

Adding extra orange juice to the recipe RUINS the dough! Don't save or try this modified version. If you want delicious orange flavor to the orgininal recipe DO zest 1 orange and add to sour cream mixture. And for an extra kick make a frosting glaze for the top: 1 tablespoon orange juice, 4-5 tbs of powdered sugar mix well and spoon over scones while still warm. Will harden to form a nice orange glaze when cooled.
