Chicken With Mushrooms

Reviewed: Feb. 1, 2013
My bf and I absolutely devoured this dish! I served this over whole wheat pasta with a garlic, olive oil, parsley, and a can of chopped tomatoes sauce. I also added a few spices to the breadcrumbs (italian seasoning, rosemary, oregano, and pepper). Before I put the mushrooms in the pan I sauteed them in garlic, white wine, and olive oil. I browned the chicken in the same pan. I also used a little bit of flour to make the chicken broth a little thicker. So delcious !

Butternut Squash Soup II

Reviewed: Feb. 5, 2013
My bf loved this. I didn't bother using the blender, just used the potato smasher instead to keep it sort of chunky. Added some more spices such as cinnamon, thyme, parsley, red pepper flakes, and some bay leaves. With the chicken broth, I also added half a cup of apple juice as another poster suggested. Omitted the celery and sauteed the veggies in olive oil instead of butter and garlic. I cut the squash in half, took out the pulp and seeds, brushed it with olive oil and salt, pepper, and rosemary and put garlic in the seed holes as another poster suggested and baked it on 400 for an hour before adding it to the soup. Sprinkled a little parmesan cheese on after and served with breadsticks.

Beef Asado

Reviewed: Jun. 14, 2013
Loved this recipe. I used canned tomatoes and used most of the juice as the "ketchup" but also added some ketchup for the sweetness. I also added about 1/2 a cup of red wine as suggested by another poster and it really added the depthness I was looking for. I ran out of bullion cubes so I used a few scoops of beef gravy. I let everything simmer together for about 2 hours and served it over brown rice. My bf loved it! We had some toasted garlic bread, a side salad, and some cabernet sauvignon to go with. Perfect !

Italian Breaded Pork Chops

Reviewed: Jun. 14, 2013
Great recipe ! I added some red pepper flake, salt, and pepper to the breadcrumb mixture. I also dredged them in flour before dipping them in an egg (3 is too many). I used shredded mozzarella cheese 5 minutes before taking them out of the oven over the top of the pork chops. I served it with spaghetti and red pasta sauce.

Pepper Chicken Piccata

Reviewed: Jan. 22, 2014
Boyfriend loved this recipe! I used a little white wine in the with the lemon juice. I also let the chicken sit in a ziplock of butter, garlic, and lemon juice before browning it. I used mrs.dash lemon pepper seasoning on the chicken directly to give it more flavor, too. The cayenne pepper gave it a wonderful kick. My bf is italian and he loved this version of chicken piccata !

I really enjoyed this recipe. I looked at the reviews and added chopped onion in with minced garlic, red pepper flakes on the chicken breasts along with basil and used 1/4 cup chicken broth along with the wine. I used about two tablespoons of brown sugar and simmered with the top off.
