Lemon Icebox Pie I

Mt grandmother made this when I was a boy and now I make it for my kids. Everyone loves this pie. But we do leave off the meringue. Here's a few tips I've learned over the years: I mix the yolks and sweetened condensed milk in a blender. That eliminates the tiny ribbons of wgg yolk that are in the pie if you mix by hand. I transfer this to a bowl and then fold in the lemon juice. And freshly squeezed is the best. A couple drops of yellow food coloring and you're done.

Mexican Lasagna I

A real crowd pleaser! I do add some chopped fresh cilantro to the sour cream mixture. I never bring any home and I'm always asked for the recipe.

Hot Sweet Onion Dip

Wish I could give it less than a complete star. Should have trusted my instincts. Hot mayonnaise just turned to oil. Bland flavors floating in a sea of grease.

Pork and Corn Stuffing Bake

Pretty good. Everyone liked it. I did saute the onion in a little butter before mixing it with the stuffing mix. The glaze was nice. sweet & tangy.

Unbelievable Chicken

This was good, but not as exciting as several reviews sounded. We were expecting more of a BANG! of flavor. Needs more garlic, maybe som fresh ginger and red pepper flakes. IT's not bad, just not 5 star.

Peach Cobbler Dump Cake I

A few things I've found that help prevent the sogginess are to #1 drain one can of peaches and #2 sprinkle half of a pkg of peach gelatin into the peaches befor topping with the dry cake mix. Everyone always loves this.

Lime Pear Gelatin Salad

Made this with raspberry gelatin instead of lime. Everyone enjoyed it. The pears did give it an almost gritty texture, tho. Will try again with peaches.

New York Cheesecake III

This the absolute best plain cheesecake I've ever made! Everyone loved it! I did make a graham cracker crust (1 c. graham cracker crumbs, 1/3 c. brown sugar, 1/4 c. melted butter, 1 tsp. cinnamon). Made no changes to the filling recipe. DO grease the inside of your springform pan. When you turn off the oven, I recommend running a knife around the edge of the pan and loosening the latch on the pan to prevent cracks.

Easy White Chicken Enchiladas

Real kid pleaser! Everyone enjoyed it. I had to use a 13x9" baking pan, though. No way they would fit in an 8x8. I used fresh chicken breast that I roasted and then chopped. That packaged stuff is too expensive.

Consomme Pork Chops

My entire family loved this. I did take the suggestions from some other reviews. I used a box of Uncle Ben's Long Grain & Wild Rice and stirred in a can of consomme and a can of french onion soup. Delicious!

Kiki's Sweet and Spicy Marinated Shrimp

Awesome recipe! I've taken this to several parties & always leave with an empty bowl and many requests for the recipe. I usually do use serrano peppers though, just for a little more heat. And I also add freshly sliced red onion to the marinade. Looks good served in a large glass bowl.
