Rob and Becky's Pimm's™ Lemonade

Just got back from the UK and our group really enjoyed this drink (a few thought it too sweet). It was never made with our lemonade, but rather a lemon/lime soda like 7 Up or Sprite. I don't care for mint but it is traditional and great in this drink. According to the bartenders in London you can use whatever fruit you have on hand (sort of like Sangria).

Southern Candied Sweet Potatoes

I served these for Thanksgiving. I love sweet potatoes, but this recipe was WAY too sweet for all of us. It was more like a dessert. I would cut down on the sweetness next time. Also, the potatoes ended up a bit soggy.

Mamacita's Mexican Rice

I made Mexican Rice III from AR to go with an easy green enchilada casserole I made. It was okay but I was looking for a tastier option. I did not care for the Mamcita's Rice at all. The flavors were too strong and did not have an authentic Mexican flavor at all. I used the turmeric as I didn't have the saffron (don't stock it due to the price). Will not make again.

Mexican Rice II

While this recipe was very easy to make it was just okay. I didn't dlslike it but it wasn't really great either. I may make it again, but will most likely look for another recipe that is a bit more tasty. It was much better the second day.

Quick and Easy Green Chile Chicken Enchilada Casserole

I served it tonight and everyone loved it. I made a double recipe and used 2 packs of Gardien brand vegetarian "chicken", one tub of Tofutti sour cream, and one package of Daiya cheddar cheese. I also added one can of black beans. I followed a reviewer's suggestion and just mixed everything all together (including all the sour cream and 2/3 of the package of "cheese")then just put it in the casserole dish and sprinkled the "cheese" on top. It tasted great!! It took 65 minutes to get hot in the center.

Vegan Pancakes

I took some of the reviewers suggestions and used vanilla soymilk and subbed half the white flour for whole wheat (and threw in a few vegan chocolate chips). It was very easy to make with usually stocked ingredients. My 4 yr. old grandaughter enjoyed helping to make them with me. The consistency of the batter was perfect! Be careful and watch closely as they cooked very quickly. I would have given it a 5 but it wasn't quite as good as buttermilk pancakes in taste.

Banana Bread VIII

This is the best banana bread!!! I have made banana bread since I was a kid and this rivals any other recipe (vegan or not). You can add whatever you'd like or make it without any additions (choc. chips, nuts, etc). I use VERY ripe bananas.

Easy Paella

I followed the suggestion for smoked paprika, but did not adhere to less lemon zest which I really wish I had. It was WAY too lemony for my liking. My family thought it was just OK and should not make it again without tweeking it.

Tofu Turkey II

My family LOVES this recipe (all vegetarians/vegans) I do change quite a bit: Make tofu part as directed ( I now use the vaccuum packed super-firm tofu and you don't need to drain it. "Stuffing" is Awesome Sausage, Apple and Cranberry Stuffing from this site (I use tofurkey brand apple sage sausage and veggie broth). Place stuffing on a 9x13" pan molded into a half sphere. Cover this with the tofurkey mixture. I use the maple glaze from the allrecipe called "Maple Roast Turkey" by Lipo. The glaze is WONDERFUL!!! I have made this the last 3 to 4 years at the holidays and have had to make a bigger batch as even the meat eaters are gobbling it down. Best vegan gravy is Ann Gentry's Golden Gravy from her Real Food Daily cookbook. Yum!
