Authentic Pad Thai

LOVED this dish and my guests did, too! Only wish I had been able to find tamarind at my grocery store. I substituted 1 Tbsp brown sugar and 1 Tbsp lime juice for it, and it was delicious, but I'm sure it would have been even better with the real thing :)

Easy Chickpea Curry

Absolutely adored this curry!! Like many others, though, I left out the milk, sour cream, bouillon, sugar, and almonds, and I decided to use tomato paste instead of ketchup. I also used 4 small golden potatoes instead of russet. Not sure how some people got flavorless curry from this recipe, mine was VERY flavorful&spicy, I actually will cut down on the garam masala a bit next time I make this!

Chicken Balsamico

I and my guests loved this, and didn't think it was blah at all! I did make some changes, though. I sliced the chicken into smaller pieces and cooked it by itself in the skillet until it was only a little pink in the middle, then put it into a glass baking dish and covered it with the vinegar/soup mix. I used 2 Tbsp regular balsamic vinegar and 1 Tbsp cinnamon pear balsamic to give it more flavor. I added sliced cherry tomatoes to the dish (skipped the olives) and baked it at 350 for about 10 minutes. When it came out, I topped it with mozzarella cheese and served it with orzo and rosemary sweet potato wedges. I would definitely suggest trying with an infused balsamic!

Chocopeanutbanana Smoothie

Made this for myself after a 10-mile run this morning and it was fantastic. I replaced the chocolate syrup with chocolate protein powder and added a generous handful of ice cubes. Perfect recovery drink.

Spinach and Spaghetti Squash Quiche

Creative recipe that was fun to build on! Like other reviewers said, I think it would have been very very bland made this way, but it was great to add stuff into. I made it with 5/8 cup egg substitute and regular 1% milk because I'd run out of eggs and evaporated milk, and it still turned out fine. For mix-ins, I added leftover chicken, red pepper, onion, garlic, basil, salt, and pepper.
