Garlic Mashed Red Potatoes

This is the first time my mashed potatoes ever came out smooth and delicious. They weren't very garlicky, though... so if you like a strong garlic taste, add more cloves of garlic to the recipe. Also, you MUST use RED potatoes. That's the secret to this great mashed potato recipe!

My Crab Cakes

SOOOOOO GOOD! I used a 16oz can of lump crab meet and doubled the rest of the ingredients. These tatsed sweet, spicy, and delicious!

Cream Cheese Squares

This is a very sweet dessert! I added a layer of Nutella before I spread the cream cheese mixture. Other than that, I followed the directions exactly. Everyone raved about them. I think the Nutella made a big difference by taking the taste to the next level.

Baked Scallops

I just melted the butter (in the microwave) directly in the baking dish, then added the minced garlic, threw the scallops in the dish, and tossed them in the garlic butter. Finally, I mixed all the remaining ingredients and baked as directed. I used sea scallops instead of bay and used panko bread crumbs. THEY ARE DELICIOUS!!!!!!! ONE DISH COOKING... YOU GOT TO LOVE IT!

Cake Mix Cookies VIII

If you like brownies, then this is your cookie! I always use Devil's Food cake mix (Betty Crocker is the ONLY brand I'll buy) and Nestle chocolate chips. I followed this simple recipe exactly and had some bangin' cookies. They taste better after they cool.

Slow-Cooked Pork Barbecue

I'm always looking for "THE BEST" slow cooker recipes and this is it for BBQ pork. This was super easy, with very yummy results. I used Sweet Baby Ray's BBQ sauce (my household favorite!) and regular coke. It was moist, flavorful, and simple to make. We put it on potato rolls for sandwiches. This is my kind of dinner!!!

Slow Cooker Ham

I was a little apprehensive at first because I did not want to ruin an expensive ham. I used a smoked butt ham from the grocery store. I followed the recipe exactly and it came out SO good! I still wonder where all the liquid came from because I know I didn't add any. This will be my only ham recipe from now!

Sugar Peanuts

My only advice is to keep stirring! I waited about 15 minutes and all of a sudden the liquid crystallized. I put the nuts on a cookie sheet and baked for about 15-20 minutes (didn't need the full 20 minutes). I tried this recipe both with salt and without. I think it is better without the salt! This recipe is great for parties, too. My friends loved them!

Chickpea Macaroni Salad

The flavors in this dish reminded me of my trip to Greece. I left out the pasta and added chopped cucumber. I used fat free feta cheese, too, to make this a Weight Watchers dish (if you're on the Core plan). Also, 1/4 cup of oil is plenty for this dish. This was so good! Thanks :)

Sangria! Sangria!

This is the best sangria recipe yet! It is comparable to the one at my favorite Portuguese restaurant. As other reviewers suggested, I used Sprite (instead of sugar and carbonated water) to sweeten. I also used some of the maraschino cherry juice to sweeten it, as well. I didn't have oranges, but I cut up some strawberries to add. You can easily drink a lot of this because it does not have a strong alcohol taste. Be careful not to drink too much; the next day is a bit rough. :)

Award Winning Soft Chocolate Chip Cookies

This is the greatest cookie recipe ever! No matter where I bring them to, they are always devoured. I would suggest using half semi-sweet and half white chocolate chips instead, though. The white chocolate adds to the sweetness and blends well with the flavor of the walnuts. Excellent recipe!!!
