Easy Chicken Casserole

This is really good! I include the onion and mushroom, and also throw in a can of mixed veggies. I have nicknamed this "Chicken pot pie without the crust" and get great feedback when it's tasted!

Rosemary Ranch Chicken Kabobs

Very good flavor! I changed one thing, but followed everything else. I didn't have fresh rosemary on hand, so I used dried rosemary. I let it marinate for a little less than 2 hours, and baked the dish for under 40 mins. Next time I'll try to have fresh rosemary, but I think the dried worked very well!

Oven Fresh Seasoned Potato Wedges

Yummy! I boiled them for 7 mins first like claire03 suggested, and they came out just right! I forgot to set a timer, but I think I baked them for about 15-17 mins. Next time I'll cook a little longer, I love crispy fries/wedges!

Creamy Rice Pudding

Go to recipe for rice pudding for us! We've played around with the raisins, and we end up putting very little in. I prefer 1/4 cup raisins, and we add in cinnamon. Very filling dessert!

Bacon Cheeseburger Meatloaf

Love this recipe! Husband likes it too, so it's a keeper! I made it as is, except the french-fried onions. I subbed in white onion to make up for it. I've made this twice, the first time with microwave bacon, the second with traditional pan cooked bacon, each time subbing in white onion. Others said their loaf was mushy, mine wasn't. I used a tad bit over 1/4 cup of bread crumbs, not enough to make a difference though. When I make this next, I think I will leave out the salt.

Best Black Beans

Easy way to dress up a simple can of beans. I've had them in my cabinet for a while, but didn't want to fix them plain. I used KitchenDiva's advice - cooking the onion and garlic before adding the beans, and replaced the juice with chicken broth. I didn't measure out the cayenne, but I wish I had since we couldn't even taste it. Husband and I both liked it!

Lebanese Chicken and Potatoes

Made this according to the recipe, with the exception of putting 1 tsp of ground cumin, and only putting in 1/2 a cup of the lemon juice. It was pretty lemon packed, I wasn't able to taste much of the garlic (And I put extra in) so maybe next time I'd like to saute the garlic in the oil before, then marinade. It got good comments from the hubby and a friend, so I'll make it again sometime!

Cheesy Sausage Zucchini Casserole

Just made this last night! I didn't do everything exactly to measurement, since I cut the recipe in half. I used turkey sausage, and used some shredded Monterrey Jack cheese I had. It turned out pretty yummy! I personally think it would make great breakfast burritos in the morning.

Lime-Curry Tofu Stir-Fry

Made this last night... Really good! I changed things up a bit... My ginger went bad so I used crushed ginger. And I had curry sauce on hand, not paste. It still turned out yummy! Seems like this recipe is pretty forgiving. Will definitely make it again!

Colorful Vegetable Fajitas

I just made this last night. My husband and I LOVED it! I mostly stuck to the recipe aside for swapping out the yellow squash for green zucchini, what I had on hand. I will definitely be keeping this around and making it often!
