This is amazing and I always feel good after eating it. I add more fresh veggies, cut back on the feta (4oz rather than 6oz), and add extra red pepper. My husband loves it too and he dislikes most of the ingredients. Another plus about this dish is that you can pre cut the veggies a few hours before and whip it up in only 10-15 min.
