Pressure Cooker Teriyaki Chicken

I crushed pineapple leftover from another recipe. Since I had 2 lbs of chicken thighs, I cut everything else back. However, I further reduced the liquids from what would have been 1 1/2 cups to 1 of only soy sauce and chicken stock combined. I left out the sugar and used fresh garlic and ginger. I reduced cooking time to 15 minutes because I was short of time and it seemed that would be long enough to assure the chicken would be done. I ended up with tons of sauce which 2 tbls of cornstarch barely thickened, and if I'd added the sugar, the sauce would have been way too sweet. The thighs were also a little dry. I like the idea of this recipe--quick and easy--so will likely try it again further reducing the starting liquids, increasing the garlic and ginger and cutting a few more minutes off the cooking time.

Alyson's Broccoli Salad

I used this as a starting point because the recipe does not start with a huge quantity of sugar (some recipes call for 1/2 to a full cup of sugar). I reduced the bacon, mayo and sunflower seeds by 50% to significantly reduce the number of calories and left the sugar out altogether. This takes the calories per serving down almost 250 each. And the salad still tastes great with sweetness from the raisins. There are plenty of sunflower seeds per serving--I definitely would not use a full cup. You can taste enough bacon and the dressing is still creamy but the salad isn't swimming in it.

Cheesy Baked Cauliflower II

Excellent! Almost like mac and cheese without the carbs since I made it with cheddar cheese instead of Swiss. I made 2 changes: I cut the butter in half which reduced fat calories but still gave a nice buttery flavor; and I added a few crushed buttery crackers tossed with a little olive oil on top for a bit of crunch. My husband even said it was really good.

Fat Free Refried Beans

Cut the liquid smoke in half and it still overwhelmed. Might be ok with 1/4 tsp. Would be better if onions were sauteed before the beans were added so that they would be cooked more. Will probably not make this again.
