Broccoli Cheese Soup

I just made this tonight and it came out terrific! I did make a couple of changes. I wanted a meal in a bowl so I boiled 2 bone-in chicken breasts and used the broth from that. I then added a little more water and several bouillon cubes. I followed the rest of the recipe as written except for adding the chopped chicken to the meal. For the milk, I used skim. Every little bit counts. Very good!

Bodacious Broccoli Salad

This has become a family favorite. I did tweak it a little by adding Craisins and I cut the pepper to around 1/2 tsp and the salt as well. Still, the vinegar, sugar and lemon juice gave lots of flavor

Wienerschnitzel

This came out terrific. The only change I made was to omit the butter and I used olive oil instead. I refrigerated for around 3 hours and I followed the directions to cook on medium heat. I did not have the problems that some reviewers have had where they have had the coating coming off in the pan. I served with a side of lightly seasoned pasta and a simple salad of greens and a vinaigrette. Perfect!

Awesome and Easy Creamy Corn Casserole

Aw-some Cole Slaw

I just got a new food processor that made the preparation for this go rather quickly. I'm fairly picky about slaw but this one is terrific. My family is asking me to make more. I also left out the onion but I'll probably add it next time. This one is definitely a keeper.

Spaghetti Carbonara II

I made this last night for the first time. I thought there would be enough for lunch the next day. I was wrong! It disappeared. This is definitely going to be made again. My boyfriend requested more bacon next time but everything tasted wonderful. I just had to add something more. We've been trying to find ways to cut back on calories so we grill or smoke a lot of our meats and vegetables these days. I've tried this recipe by substituting smoked chicken, turkey or salmon instead of bacon. DELICIOUS!!! I've also used red onion for color and added fresh mushrooms and sauteed in olive oil.

Very Chocolate Ice Cream

I have just gotten into making homemade ice cream over the past few weeks. This turned out perfect for me. I have made it twice now with rave reviews. It is very creamy. I have to agree with another reviewer that maybe it is not "very" chocolate but I'm going to experiment with some darker varieties. But as this recipe is written, the flavor is quite good.

Red Potato Salad

I finally found a potato salad recipe that my daughter likes! I took a couple of suggestions from here and reduced the amount of dill. This was nice and creamy. I'll be making this again.

Cavatini II

I loved this and so did my family!!! I have been looking for something that had a chunky sauce and baked the pasta. I did make a couple of subtle changes. We don't care for pepperoni so I substituted turkey Italian sausage and lowfat Ricotta. This is a definite keeper.

Herman Biscuits

My family loved this. They smelled great while they were cooking. The texture is a little cakey. I had to add around 1/2 cup more flour to get the right consistency but the flavor is terrific.

Gone-All-Day Casserole

This is okay but is a little bland. I followed the recipe to the letter and ended up with a blob of rice in the bottom of the slow cooker. With so many other terrific recipes on this site, I doubt I will make this again.

Italian Style Pork Chops

This is a great recipe when you don't feel like spending too much time in the kitchen preparing. I use bread crumbs instead of saltine crackers since I buy them already prepared in the store. My family loves this.

Best Bruschetta Ever

When I made this I took a loaf of French bread and sliced it lengthwise, brushed a little olive oil on it and toasted it for just a few minutes. Then I added the bruschetta mixture and put it back in the oven for around 10 minutes. I think I'll sprinkle a little mozzarella over it next time but this was still great.

Banana Peanut Butter Bread

My family loves this bread. I have used 1/2 cup of white sugar and 1/2 cup of brown sugar and I also added about 2 teaspoons of cinnamon and a teaspoon of vanilla. I make this bread a lot and its a terrific snack or dessert.

Chantal's New York Cheesecake

I followed this recipe to the letter and never had a problem with cracks. My family loves it. I did find that it is too much for a 9 inch springform pan but when I put it in a 10 inch pan it was perfect. When the baking time is done I just turn off the oven and let it cool inside overnight and put it in the refrigerator in the morning.
