Chef John's Banana Bread

Second go around for this recipe. Didn't want to do a loaf. Doubled the recipe and did muffins instead. A little easier for this family with all the kids no longer at home. Me and my hubby can then just pull from the freezer, zap and enjoy with morning coffee. No walnuts this time but did add the choc chips. When the grandkids come this is a perennial favourite.

Taco Pies

I am making this right now. Using the taco seasoning added some red pepper and mushrooms. No refried beans as I didn't have any. I also am using wraps instead of the pie shells. Doing this because Loblaws at one time carried a taco pie and this is what they used. It tasted great and so I did it on my own. Will be layering shredded cheddar between the layers and baking in the oven about 20 minutes 350 to heat through. Used a 9 inch round pan and three whole wheat wraps. Will serve with salad and the usual acoutrements that accompany regular tacos.

Easy Fruit Cobbler

think I overbaked it ouch!!! stills tastes great. Added an egg and vanilla to the batter. Dusted the top with a bit of brown sugar and cinnamon \next time won't bake quite as long However, we will be eating this :)

Cheese Rosti

Made a version of this with reduced servings(3).Grated 3 spuds 1/2 cup grated parmesan ,1/2 tsp garlic powder salt and pepper to taste. Also added 1 egg to bind it. Added2 tbsps water as well. Turned the uncooked grated potatoes into cast iron pan that I oiled with 2T olive oil. Covered the pan and it is cooking as I type. So far so good :) Turned out not too badly. Needs a little more tweeking

Make Ahead French Toast

Made this for a family gathering and got rave reviews from all. The only complaint,why did I not make two pans? My only changes were walnuts unstead of pecans(had the walnuts) and a light sprinkle of cinnamon over the topbefore pouring thesauce over to bake Absolutely loved this recipe!

Rhubarb Slush

Just finished making this and used 9 cups rhubarb 1 1/2 cups sugar, small can frozen pink lemonade and small frozen can OJ. Could not wait to try it and added a scoop into an ice filled glass topped with tonic. This is great!!!! My husband is a big tonic fan but likes a little something extra in it for a different flavour. This fills the requirement.

Moroccan Tagine

Loved it. Did not have cumin or pears. Used Gala apples and served mine with cous cous and my husband 's with rice. Had green beans as a side. It was a delicious meal and I would definitely do it again. Might try it with chicken thighs

Sirloin Steak Dianne

Followed the recipe fairly closely but used Cremini instead of button mushrooms. Did not find there was too much sauce but Ireally ladled it over the steaks. Definitely will do this again and would serve to company in a heartbeat as I could still cook and visit at the same time!

Best Stovetop BBQ Ribs

Tried this and it turned out not too badly. Used Kraft Chicken and Rib Sauce/minced garlic , soy and Worcestershire sauce. Also did the onions. Flavour not bad and would do again just for the ease of it. Made sure I cut most of the fat of the ribs. Served with parsleyed Basmati rice, and green beans. Would do again just for the ease of it but recipe certainly needs tweaking

Crispy Chicken Parmesan

Did this tonight with a few changes Used chicken coating pkg with extra italian seasoning in it. Also added a couple of shakes of cayenne. Sauce was homemade with some Catelli added. Served with spaghettini. Broiled the chicken with cheese at the end. Well supper has been eaten and it was a hit. Will definitely make this again. Quick and easy!!!

Raspberry Custard Kuchen

Added blueberries as I did not have enough raspberries other than that have followed the recipe exactly. Cut it in half for a smaller yield and did it in a round pan. Seems to be a traditional way of doing it in southern Alberta where kuchen reigns supreme. It is still in the oven but smells great and I am looking forward to dessert and the leftovers for breakfast!
