Delicious Moist Poppy Seed Cake

Super moist! Followed this recipe exactly as written and it came out perfectly. I was a litter nervous about the batter because it was so thick and equally as nervous about the lemon sugar syrup because it was so thin, but I kept the faith that the ratings were accurate and went ahead with the recipe as written. I do not regret it! I did add some lemon juice in with the zest as I was making it, but other than that I didn't make any changes. Highly recommended for a fall dessert or with morning coffee.

Sarah Contona's Sweet Potato Pie

Super moist! I used Lactaid skim milk pulsated to a light cream vs. the cream cheese/light cream the recipe calls for. I also added cinnamon and nutmeg to the batter to give it that fall flavor. The pie itself it not too sweet, so I opted for the large marshmallows instead of the mini ones. What I ended up getting was marshmallow with a side of pie, so DO NOT SUBSTITUTE the marshmallows. This pie was still gone in about 15 minutes, so it wasn't a complete fail, but I will be sure to stick closer to the recipe for the next go 'round. Definitely worth a try for Thanksgiving!

Apple Pie

40 minutes on 425 and this pie comes out amazing! Will definitely make again. One thing the recipe could use is a suggestion on how to keep the crust as evenly browned as the rest of the pie as it appeared to be burning just as the rest of the pie was completed cooking. Otherwise, a perfect 5!

Linda's Summertime Eggplant Salsa

Used crushed canned tomatoes and tomato paste in place of V8 since I didn't have any at the house. Also, I omitted the cheese as I am lactose intolerant and didn't have any pine nuts on hand,but this recipe was still AWESOME! The raisins and brown sugar help balance the acidity of the tomatoes, vinegar and olives. I didn't microwave the eggplant as the pieces I made were so small, little to no water was reserved in them. It didn't taste oily to me. Served it with pot roast and crostinis. Everyone scraped their plates!

Roasted Turkey Legs

Great recipe. I made a few changes, though. 1: I added thyme, rosemary, parsley, cayenne pepper, and red pepper flakes to the butter and made a rub I put under the skin and all over each leg 2: I punctured a whole in each leg near the bone and put a half clove of garlic and a roughly cut cippolini onion in 3: I added baby red potatoes, carrots, celery and onions all around the legs and used the remaining butter mixutre to coat each 4: I put a cup of chicken broth over everything. I cooked uncovered like the directions ask, but I turned up the oven to 375 to get them more crispy. They came out juicy and delicious and I didn't need gravy as the juices at the bottom of the pan were gravy enough. Definitely will make this recipe again!

Szechwan Shrimp

Bought the House of Tsang pre-made szechuan sauce to cut out half the time. Added pea chutes, bean sprouts, carrot matchsticks, sliced red and green peppers and sauteed them in a wok for about 10 minutes so they had that charred look to them before adding the shrimp and szechuan sauce. I made some brown rice ahead of time and refrigerated it so it cooked up nicely as fried rice in a cast iron pan. I made a whole in the middle of the fried rice and scrambled two eggs. After the stir fry was done and the shrimp were opaque, I blended with the fried rice and served everything together in one dish. The House of Tsang szechuan sauce was perfect but is pretty spicy, so be sure not to add too too much just for the color if you can't take the heat.

Lime Cilantro Rice

Used long grain wild rice for a nuttier flavor and a toasty crunch. Served with homemade barbacoa, grilled veggies and taco bowls (corn tortillas shaped on muffin tins). Awesomely light flavor...perfect for summer.

Jewish Apple Cake from Bubba's Recipe Box

I only had a 9 inch pan so I used a ramekin in the center and halved the recipe to get the same affect. Came out perfectly! This recipe is dangerously easy. DANGEROUS.
