Maple Butter Frosting

I made this frosting to go with the Maple Nut Cake, also from this site. It was so delicious that I had to make a second batch, because the first didn't make it onto the cake!

I had never bothered to make my own pasty before as I thought it was too hard. Boy, was I wrong. This recipe was simple to follow and even though I substituted butter for the shortening, it turned out perfectly. The pie crust was lovely and flaky - just melt in your mouth perfect! I used it with the Caramel Pecan Pie recipe from this site.

Hash Brown Casserole II

WOW! I originally made this for Thanksgiving where it was eaten in record time. The end result was a delicious, creamy dish. The only things that I changed in the recipe were omitting the extra salt and using low-fat sour cream and cheddar. My flatmate and I ended up making it repeatedly for weeks and I keep on getting asked to "bring that potato thing" to carry ins! Really easy to make and well worth the effort.

Mediterranean Chicken with Eggplant

Having very little experience with eggplant, I was a little worried about this dish. My worry was unfounded, because the end result was delicious. My sometimes difficult to please husband loved it (as did the rest of the family). The only change I made to the recipe was to add a few cloves of garlic. This one's definitely a keeper!

Mrs. Sigg's Snickerdoodles

I have never had snickerdoodles before...and oh boy, was I missing out! As per other reviewer's suggestion, I replaced the cream of tartar with lemon juice. I made the cookies to take to a party, but only half of them made it there - my husband ate the rest before I could stop him! I wasn't even allowed to take the leftovers home - they were an absolute hit. Lovely slightly cinnamon taste, crunchy outside and soft in the centre. Just delicious.

Maple Nut Cake

I made this cake last night. It was absolutely delicious - light and fluffy, almost caramel-like in flavour. The only change that I made to the recipe was to use real maple syrup instead of imitation, and to use about 1 1/2 tablespoons instead of 1 teaspoon. I also made the maple butter frosting and it really made the cake something special. I have already had requests to make it for several parties in the near future, and given the response, I will definitely oblige!

Caramel Pecan Pie

This is the first Thanksgiving dinner I have made (or had - I live in Australia), and this recipie is absolutely delicious. It is amazingly simple to make. The only changes I made were to use 1/2 a cup more pecans (to fill a slightly larger dish), and I used the basic flaky pastry recipe provided by this site. All my guests loved the pie;unfortunately no leftovers though! I have several requests to make this in lieu of birthday cakes, so I will definitely be making it again.
