Rempel Family Meatloaf

I made this meatloaf tonight and my family loved it; even my picky 15-year old asked for a second serving!! I did tweak the recipe just a little; it calls for ½ cup buttery crackers and I used a full cup; in addition I also substituted ¼ cup of Kraft Smokey BBQ Sauce in place of the 2-Tablespoons of “Steak Sauce” it called for. Other than that, I followed the recipe as written. My family left only a very small portion for me to make a sandwich out of the next day at lunch. Delicious!!

Chef John's Perfect Mashed Potatoes

When I usually make mashed potatoes I have some left for a lunch meal the next day; when made this for my family there was none left after supper! Chef John’s instructional video gives some great tips and make the difference we all tasted. I did “tweak” Chef John’s recipe ever so slightly; Chef John called for ½ cup of milk and I used 2/3 cup of milk. This seemed to make the potatoes a touch creamier. I recommend this recipe highly as does my family!!

Simple Peanut Butter ,Tomato & Onion Sandwich

My wife introduced me to this combination 22 happy years ago the summer after our wedding. It does sound unusual but I easily fell in love with this simple sandwich. I noted that this updated recipe calls for a couple of extra ingredients (i.e.: mayonnaise & sugar); we have always just used the bare essentials - white bread, a juicy tomato, a pinch of salt and smooth peanut butter. We tried the recipe with the updated extras - it was indeed good and tasted similar to what we have always enjoyed; but we feel you cannot beat the original.

Linda's Lasagna

My family enjoyed this meal and it is quickly rising to be one of our favorites. I will comment that adding the 2-cups of water was a bit too much in our opinion; we like the lasagna to have more body. The second time and third time we made the recipe I reduced the water; I found that (for our personal taste) between 1 and 1&1/4 cup of water works best. The flavor is fantastic from the beginning - however - it matures and blooms the next day (if you have any leftovers)!

Italian Grilled Cheese Sandwiches

My wife and daughter love the cheese-garlic bread at our local pizza shop; when I made these they stopped ordering from the pizza shop and now insist I make these instead. The taste is great and the prep is easy.
