Amazing Crunchy Tofu Salad

Well, it sure tastes good. The tofu didn't get crispy, but then again I'm really bad at frying things. I want to try again after figuring out how to fry properly. I added in some bell pepper since we had it. The dressing is quite tasty, but there's a lot. I will make this again!

Health Nut Blueberry Muffins

I'm giving this 5 stars because it's delicious, but keep in mind that I made some substitutions based on what I had on hand. I substituted flax meal for the wheat germ and used wheat bran instead of oat bran. I also used soy milk with some lemon juice rather than buttermilk, and I doubled the blueberries. I would suggest NOT doubling the blueberries, although 1.5 cups would probably be good; mine had too many and you can't taste the delicious muffin part enough. I used a just-ripe banana, and the taste was not at all overpowering. It also took me 20 minutes to bake them. But overall they are absolutely delicious muffins and I will most definitely make them again. I think this is my keeper blueberry muffin recipe.

Hummus III

This is great hummus, better than another recipe I tried once. Unlike other reviewers, I didn't think it needed extra liquid. I washed the garbanzo beans and drained them but didn't dry them. I added a bit of olive oil to the mix, but not much. I made the recipe as written, but it seemed way too lemony, so I added another can of beans and another 1/3 cup tahini. It turned out great. Perhaps, as another reviewer mentioned, the lemon flavor will diminish after today. Oh, I also added the paprika directly to the mix, as I won't be serving it to look nice and just wanted the flavor. Next time I'm going to try adding cumin. This recipe is definitely a keeper. Four instead of five only because I'm not sure about the lemon situation.

Vegan Bean Taco Filling

This is an awesome recipe for taco filling; we make it all the time for tacos and burritos. A bit of sour cream on top adds great flavor and takes away some of the hot spiciness (in case that's a concern).

Red Skinned Potato Salad

Excellent potato salad! I cooked the potatoes for 20 min because they were still crunchy after just 15 min. Also, I lightly sauteed the onion and celery instead of putting them in fresh. And I substituted sauteed mushrooms for the bacon. With these minor variations, the recipe is superb!!

Baked French Fries I

Incredible fries! Important -- bake at 400 degrees, for 40-45 minutes, and turn at least once during the baking. If you use the 450 degrees in the recipe, the fries will burn. I mixed everything in a gallon size ziploc bag. For the spices, I used freshly minced garlic (no onion powder), paprika, cumin, cayenne pepper, and chili powder. I used 6 potatoes (4 russet, 2 sweet) and 1/3 cup oil. Delicious!!

Spicy Potatoes and Scrambled Eggs

Really great recipe! You definitely should microwave the potatoes before sauteeing them. I tried it previously without prior nuking, but then it took an hour before they were cooked. I fried them with an onion and 2 cloves of garlic in addition to the spices. Also, I added paprika and cayenne pepper. When the potatoes were just about done, I scrambled the eggs (with black pepper; without salt or oil) and added them to the potato mixture. Tastes great!

Barley and Mushrooms with Beans

Squash Cookies

I just baked these and they're great. I used butternut squash. We left out the raisins at my mother's request. They aren't really like cookies, more like little mini-muffins or cakes (all that baking powder). The taste is excellent! Will definitely make again.

Spaghetti Squash Casserole

Pretty good recipe, though I'm more partial to a cheesier casserole, with tomato sauce. The bread cubes toasted on top add a nice touch; try substituting flavored croutons for more bang.

Sweet Potato Pudding

Excellent dish! I made this for dessert and, after just one spoonful, my wife insisted "you gotta make this for my mother!" One change: I used 3 tbs butter instead of 1/2 cup.

Pizza Dough II

This was an excellent pizza crust, and very easy to make. I was cooking for two people so I cut the recipe in half. I used 1 cup of whole wheat flour and 2 cups of white flour. The crust was delicious and just the right texture.

Salmon With Green Fettuccine

Really delicious! We added crushed garlic to the sauteed veggies, substituted soy milk for the milk and olive oil for the butter, skipped the white wine, and added 10 oz of spinach and a dash of paprika. It was great... and sustentacular!
