Amazing Crunchy Tofu Salad
Well, it sure tastes good. The tofu didn't get crispy, but then again I'm really bad at frying things. I want to try again after figuring out how to fry properly. I added in some bell pepper since we had it. The dressing is quite tasty, but there's a lot. I will make this again!

Health Nut Blueberry Muffins
I'm giving this 5 stars because it's delicious, but keep in mind that I made some substitutions based on what I had on hand. I substituted flax meal for the wheat germ and used wheat bran instead of oat bran. I also used soy milk with some lemon juice rather than buttermilk, and I doubled the blueberries. I would suggest NOT doubling the blueberries, although 1.5 cups would probably be good; mine had too many and you can't taste the delicious muffin part enough. I used a just-ripe banana, and the taste was not at all overpowering. It also took me 20 minutes to bake them. But overall they are absolutely delicious muffins and I will most definitely make them again. I think this is my keeper blueberry muffin recipe.

Hummus III
This is great hummus, better than another recipe I tried once. Unlike other reviewers, I didn't think it needed extra liquid. I washed the garbanzo beans and drained them but didn't dry them. I added a bit of olive oil to the mix, but not much. I made the recipe as written, but it seemed way too lemony, so I added another can of beans and another 1/3 cup tahini. It turned out great. Perhaps, as another reviewer mentioned, the lemon flavor will diminish after today. Oh, I also added the paprika directly to the mix, as I won't be serving it to look nice and just wanted the flavor. Next time I'm going to try adding cumin. This recipe is definitely a keeper. Four instead of five only because I'm not sure about the lemon situation.
