Easy, Sweet Cornbread Muffins

This is definitely the way to go as opposed to just following the directions on the Jiffy box. I halved the recipe and also put it in a small round cake pan instead of making muffins because my muffin pan is MIA. I also omitted the sugar just as a preference and I am glad I did because it would have been too sweet for us. The cornbread turned out moist and fluffy with a wonderful honey flavor. This will be a permanent switch for our house. Thanks!!

Parmesan Sage Pork Chops

Making this recipe for the 2nd time. It is very simple and we like the flavor. The pork chops stay nice and moist, too. The only thing I did differently this time was squeezing lemon juice into the beaten egg because I did not have a whole lemon on hand to zest. It is a small detail and did not seem to matter. Thanks for sharing!

Italian Vegetable Soup

So good!! I am actually making it again tonight. Last time I followed Jackie's the recipe EXCEPT I used spinach instead of cabbage and ground turkey instead of ground beef because I had a ton on hand and instead of all water, I did 2 cups of water AND 2 cups of beef broth. I found it needed some extra seasoning at the end (extra of the spices the recipe called for plus sea salt and pepper). Also, I highly recommend letting the soup simmer for a couple hours. I taste tested after completion and it was good but after a few hours on the stove it was even better. I think I may use my crock pot today. I also think I would prefer to reduce the tomato sauce, add another cup of water and some more garlic (these are just ideas, haven't tried them yet). Moral of the story, this is a great recipe; even better for adding your own flare to accommodate your taste. Thanks, Jackie!

Easy Corned Beef and Cabbage

Sooooo good! Made it for St. Patrick's Day and it was so easy and so delicious. I think I was a little heavy handed with the salt and pepper. We had mixed reviews on whether it still needed more or not. I personally thought it was perfect but as I said, I added a little more than the recipe called for but that's merely a preference thing and easily customizable after serving. Thanks for the recipe! Will definitely make this again.

Classic Goulash

We really enjoyed this recipe. I used my crock pot and did make some adjustments that other users suggested. I used the tomato juice instead of water. I was rather heavy handed with the seasoning. I added lots of pepper. I used Worcestershire instead of soy sauce, too. Oh and I added a orange bell pepper and a can of cream of mushroom (which was awesome by the way). Wow, now that I typed this out I realize how many adjustments I actually made. I was just so excited about everyone's suggestions I guess I used them all. Oh well, it was delicious :)

Made this for St. Patrick's Day and it was awesome! Everyone gobbled it up including my 2 year old who rarely eats anything like this. I did add two more pieces of bacon than the recipe called for but I followed it perfectly other wise. It was so good and very easy! I think next time I will add more onions but that is just a preference thing. Thanks for the recipe!

White Cheese Chicken Lasagna

I made this dish for my husband's birthday this year. He had to work so I needed something I could build and bake later. I only used 15oz of spinach and I am very glad I did. I also wish I would of shredded the chicken instead of cubing it. This is a very heavy, cheesy dish and I felt it was not as good reheated like regular lasagna typically is. Not sure if I would make it again but that is merely based off of personal preference.
