My favorite things to cook
I love to bake more than anything, but I really enjoy just spending time whipping up whatever! I never turn away a new recipe (unless the ingredients are too pricey...but even then I'll splurge). I love my crock-pot and my only wish is a bigger kitchen!!!
My favorite family cooking traditions
I'm really the first cook in my family. My mom makes really good burnt meatloaf and really good mac and cheese. That's about it. I learned the basics from a nanny I had growing up, and I'm self-taught from there. I was making full family meals by myself before I was 10, and I loved every minute of it. Of couse, there is some stress occasionally...but that makes the finished results even better!

Refried Beans Without the Refry
I'll never buy canned refried beans again! This was incredibly easy and sooo tasty! I made this exactly as written, with one exception - I used the whole jalapeno not just half. Next time, I'd use less garlic and less salt; however, I say that as I'm eating my third helping today. ;-) I started this out on high and it boiled over...so I dropped it to low. All in all, it was on high for about 3 hours and on low for almost 10 - I fell asleep and turned it off in the morning. These beans are creamy, totally flavorful, mash well, and reheat beautifully! Definite keeper!!

Easy Apple Coleslaw
Off the charts good! I fed 200 people this slaw recently and everyone was floored at how amazing it is - and it's really so very easy! The dressing makes it! I will say, though, that I will only dress this slaw the same day I'm serving it. I didn't care for it the day after. A+ recipe!!

Cranberry Orange Loaf
I just found and made this recipe today after reading through some others. This was so great! I used sliced almonds in place of the pecans because that's what I had on and - and had to use butter in place of the margarine. Otherwise everything was the same. Oh, and I cut my cranberries in half, which I think was worth the time. I baked it in a bread bowl baker, which I probably won't do again (it baked a little uneven), but it's still SO good! I did do the orange glaze - 1 cup of powdered sugar with a splash of OJ and a drop of vanilla. I glazed it once immediately out of the oven and once about an hour later. YUMM-O!
