Sugar Coated Pecans

This recipe was great! I made a double batch for Christmas and it was a hit! I'm still munching on the last remnants. I used a 1/2 tbsp vanilla and 1/2 tbsp water. I also went heavy on the cinnamon as some other reviewers suggested. I would highly recommend--easy and yummy recipe.

Marinated Greek Chicken Kabobs

I found and printed this recipe back in 2004. I've made it several times and love it! I just put all the marinade ingredients in a Ziploc bag and add the chicken and veggies to marinate. I add tomatoes as well. Instead of doing skewers, I just put everything in a grill basket, put on the grill and turning periodically, grill all together. It seems to hold some of the marinade this way and cook in more flavor. I typically serve with/over rice. It's good to read more reviews (there were only 5 when I printed the recipe-LOL). I'm having a party in a week and this is on the menu-- am going to try adding mushrooms and garlic. Enjoy!

Grilled Jalapeno Poppers

These were really good. This was my test, so I just made half the recipe. I took the easy way out and microwaved the bacon, crumbled it and mixed it into the cheese mixture instead of wrapping the bacon around each jalapeno. I also just cut the jalapenos in half, cleaned out the seeds and stuffed them instead of doing the slivers. I then finely chopped about 1/2 a jalapeno and mixed that into the cheese mixture. I put on a sprayed grill pan on the grill for about 30 minutes. Very Yummy-- grilling the jalapeno seemed to kill some of the heat so they weren't too spicy--just right!

Spicy Coconut and Lime Grilled Shrimp

This was a good "Asian" Grilled Shrimp recipe, but I couldn't taste any coconut. I made a half batch but added almost the full amount of coconut as well as at least 3 tbs of coconut milk. I think the soy sauce is such a strong flavor it overpowers other flavors. As I said, good as a soy-garlic grilled shrimp. If I made again I'd cut way back or even omit the soy sauce and just use a little or use all coconut milk in the marinade.

Irish Cream Bundt Cake

This was amazing! I made it twice in 3 weeks for two different parties and everyone raved! I put 3/4 of the glaze in the the pan, poked holes in the cake, put the cake back in, poured the rest of the glaze over the bottom of the cake and let it stand for 15-20 minutes to soak up the glaze. i also added some mini chocolate chips to the cake batter. I used 1 cup of irish cream instead of irish cream and water. It was the best cake ever!

Clark's Quiche

This was fantastic! Made it and froze it a week before company came and they loved it! I used two Marie Callendar 9" deep dish pie crusts. I had leftovers as well--next time I'll make a third. I wasn't crazy when reading about the layers and not having a good ratio of ingredients since there's too much liquid, so I mixed everything together before pouring it in the crust. This worked great--even, homogeous distribution of ingredients and it was thick so I filled the crusts up and nothing ran over. I thawd the quiche and then heated one in 325 oven for 40 minutes. The remainder I just microwaved the subsequent days. The flavor, consistency, etc. was amazing. This will be my go-to quiche recipe. To speed things up I bought pre-diced onions and ham, shredded cheddar, and sliced mushrooms. I cooked the bacon in the microwave as I always do, so it wasn't that time consuming. Well worth it!
