Marinated Greek Chicken Kabobs
I found and printed this recipe back in 2004. I've made it several times and love it! I just put all the marinade ingredients in a Ziploc bag and add the chicken and veggies to marinate. I add tomatoes as well. Instead of doing skewers, I just put everything in a grill basket, put on the grill and turning periodically, grill all together. It seems to hold some of the marinade this way and cook in more flavor. I typically serve with/over rice. It's good to read more reviews (there were only 5 when I printed the recipe-LOL). I'm having a party in a week and this is on the menu-- am going to try adding mushrooms and garlic. Enjoy!

Grilled Jalapeno Poppers
These were really good. This was my test, so I just made half the recipe. I took the easy way out and microwaved the bacon, crumbled it and mixed it into the cheese mixture instead of wrapping the bacon around each jalapeno. I also just cut the jalapenos in half, cleaned out the seeds and stuffed them instead of doing the slivers. I then finely chopped about 1/2 a jalapeno and mixed that into the cheese mixture. I put on a sprayed grill pan on the grill for about 30 minutes. Very Yummy-- grilling the jalapeno seemed to kill some of the heat so they weren't too spicy--just right!

Spicy Coconut and Lime Grilled Shrimp
This was a good "Asian" Grilled Shrimp recipe, but I couldn't taste any coconut. I made a half batch but added almost the full amount of coconut as well as at least 3 tbs of coconut milk. I think the soy sauce is such a strong flavor it overpowers other flavors. As I said, good as a soy-garlic grilled shrimp. If I made again I'd cut way back or even omit the soy sauce and just use a little or use all coconut milk in the marinade.
