Peanut Butter Cheesecake Cups

I keep these in my freezer just to have on hand. They are absolutely decadent and rich, not for the faint of heart! Peanut butter and chocolate lovers will really enjoy these. I used a hazelnut coffee cream liqueur for my ganache, and it turned out really great! For the chocolate I used semi-sweet chocolate chips, and a few milk chocolate chips (just what I had on hand).

Gourmet Mushroom Risotto

I was a bit intimidated about making risotto, thinking it would be time consuming and high maintenance.. but this recipe was easy! I prepared the mushrooms ahead of time just to avoid prep work at dinner, and when it was time to make this dish it was no problem. The only change I made was I added some chopped asparagus to the mushrooms. This is delicious and will impress your dinner guests!

Moroccan Chicken Stew

This worked out really well. I used a whole chicken, cut up, and also added some chopped up dried apricots. The flavours were delicious and the smell cooking was great too. My two toddlers gobbled it up!

Flourless Chocolate Cake I

So amazing. I had no idea this cake would turn out like this... almost tasted like a cheesecake! I used 1/2 cup of coffee like some other reviewers suggested, and used 6 eggs but separated 4 of them and beat the egg whites folding them into the mixture at the end. Baked in a springform pan lined with parchement, but cooled the cake exactly as recipe describes to, and it came out no problem. I used dark chocolate shaving on top, and put blobs of whipped cream around the edge with chocolate covered strawberries. (served the whole thing with "sweetened whipped cream, from this site). I already got requests to bring this to two parties!
