Super-Simple, Super-Spicy Mongolian Beef

I have this saved and have been making it exactly as-is for a couple years now, with just slightly less red pepper flakes than it calls for. It's my picky step-daughter's favorite and she always requests it! Even my 5 year old loves it!

Pumpkin Swirled Cheese Cake

Awesome! I made this for Thanksgiving last year and it was a hit!! I made the crust with 1 cup shortbread cookies and 1/2 cup gingersnaps....really complemented the flavor of the cheesecake! I also did what grandma always taught me - NEVER use as much ginger or nutmeg as it calls for...I used just over 1/8 tsp each.

Chicken Enchiladas I

This was a big hit, even for my ever-picky stepdaughters! Some changes I made: They aren't chicken lovers, so I used 1 1/2 lb. ground beef instead. I also omitted the green peppers (for my husband's sake), and I had to simmer for quite a while to reduce it. I wasn't crazy about the taco sauce on it - too tangy and not the best complement to the flavor of the filling. I'm going to experiment with some of the other suggestions here and see if I can't perfect it. But aside from that, this was simply outstanding!!!

Cream of Mushroom Soup III

Awesome recipe! A few things I changed: I like a thicker soup, so I doubled the flour. Also, I have a hard time making anything savory without onion, garlic, and an herb of some sort. So, I added 1 finely chopped shallot, 2 minced garlic cloves, and about 1 1/2 tsp rosemary or thyme (I've made it both ways and love each herb in this). This is one that my picky husband requests OFTEN!

Caramel Macchiato Cheesecake

This. Was. Amazing. After reading some reviews, I opted for crushing chocolate teddy grahams for the crust and added 1 tsp instant espresso granules to the crust. I also doubled the espresso in the filling, and added 2 Tbsp caramel. I took the suggestion of placing the springform pan on a muffin tin pan filled with water, and I left it in the oven a few hours after turning it off. It turned out perfectly! So smooth and cream, no cracks, and a wonderful blend of flavors! I topped with homemade caramel - melt 1 stick butter and 1 C brown sugar, boiling about 5 minutes until smooth. Turn off heat and add 1 tsp salt, 1 tsp vanilla and enough evaporated milk until it reaches desired consistency - about 1/2 cup (will thicken as it cools).

Scotch Eggs

Very good and fun to make. 2 lbs of sausage made 6 eggs for us. We also baked them for about 30 minutes on 350, sliced in half, sprinkled each half with Cheddar cheese and baked for another 5 minutes. Even my 6 year old loved these and enjoyed making them with me!

Oaxacan Tacos

I loved the simplicity of this. I was skeptical at first, given that you don't marinate or cook the meat in any spices. The flavor combinations were amazing and very authentic! We added avocado, and for the low-carb eaters, we used lettuce wraps instead of tortillas. This is now one of our family's stand-by recipes, and great for week nights in the heat of the summer!

Mrs. Sigg's Snickerdoodles

Simply amazing. Snickerdoodles are my husband's favorite kind of cookie, and after 10 years of marriage I had yet to make them for him. I was a bit intimidated, as I wanted to get them right. After reading through several recipes and reviews, I decided to give these a shot. They were perfect. Flavor and texture both turned out exactly the way he likes them, and they were fun and easy to make. Thank you so much!

Apple Pie by Grandma Ople

This was incredible! I had developed a crust I really like, but could never get the filling quite right. I tried this today and loved it! All I had were honeycrisp apples but they turned out amazing nonetheless. I put an extra tablespoon of flour, as honeycrisps tend to produce more juice. I also added 1 T vanilla and 1/2 teaspoon cinnamon. I didn't add nutmeg...for me, less is more when it comes to spices. I just added the apples to the syrup , mixed it together and poured it all into my pie shell. Amazing. Even my husband, whose grandmother set the bar pretty high when it came to apple pies, said he loved it!

Best Ever Muffins

Very good basic recipe! I used these for mini-muffins, and baked them at 350 for about 20 minutes. I split the batter into thirds, with mini-chocolate chips in one batch, frozen blueberries with a dash of cinnamon in the 2nd batch, and lemon juice, vanilla, lemon zest and poppy seeds in the 3rd batch. All of them were a hit at our church's brunch!
