Tzatziki Sauce
I made this for a grape leaf wreath I made a few days ago. We had that for lunch and gyros this evening. The Tzadzki sauce went great with both! I did use greek yogurt and just stirred in the ingredients. I did cut the recipe in half. I shreded and salted One cucumber (I have never had this sauce with cubed cucumber and I think shreded was better), I didn't drain it much since I used Greek yogurt from my local Aldi store. I stirred in almost 1/2 juiced lemon, 1tbsp of EVOO, Pepper to taste and garlic powder to taste (saved some time and was grreat!) I had some fresh dill so I used a tbsp. of that as well! It was wonderful. As good or better than any greek or persian restaurant I have ever been to!

Basic Crepes
I like this recipe a lot! I added a cup of milk and no water though. And a tbsp. of raw sugar and some organic Almond extract which I'm not sure I tasted in the crepes. The best way not to have lumpy batter and easiest is to make it in the blender, then let the batter rest a few minutes, which I always do. I make cheese blintzes by sweetening some Aldi's ricotta cheese w/ a couple tbsp. of TJ organic powdered sugar. After the crepe comes out of the pan I spoon and spread the ricotta across the middle of the crepe and roll it up. You can top it with some jam, I just used some TJ pumpkin butter! Our second crepe this morning was spread down the middle with 2tbsp. of Nutella and then bannana rounds down the whole center and rolled up w/ a little more Nutella spread on top. My husband said it would be pretty w/some of the powdered sugar sprinkled on top. He and my 20mo. son ate them both up quickly!

Granny's Corn Flour Tortillas
From what I read of the reviews some people say they are too dry and some people say they come out perfect. Maybe, this recipe is like making fudge. Maybe it turns out perfect on a rainy day and too dry on a normal one. I am in the middle of making this and it seems to break around the edges when rolling out. I just added more water and it stuck to my waxed paper even though I sprayed it with cooking oil. I'll have to check to see if I have a gallon zip lock bag. I believe what I used was corn flour which I got at the Co-op but, it has a consistency more like corn meal than flour. Maybe I made a mistake. I have wanted for a long time to make fahitas from scratch since they don't sell the really big sized corn fahitas at the store, just tortillias. And the tortillias always have this god awful smell. Maybe from the preservatives in them and everything is made with GM corn nowadays so, I will continue to try to make my own. I will make sure I have a finely ground corn flour next time. Oh yeah, I did ad a couple of tbsp. of Olive oil thinking it would keep these from crumbling at the edges and it did with the wetter ones.
