Cheesy Squash and Zucchini Casserole

Delicious and mostly healthy!:) The most imp't thing is my very "distinguishing" husband said of his own volition, "This is really good, a high quality dish." I skipped the bread mix and only added a 1/4 c. butter and followed everything else. I didn't have a square dish handy so i made it in a glass pie dish, came out great. Oh, I also cooked it on 375 for the first 15 minutes in the oven, then baked it on 325 for the remainder. This gave it a nice brown crisp on top. Yummmm....

Vegan Black Bean Soup

It was pretty good, made it for some vegetarian family members. I could be biased--I miss the meat:). My desire was to make this a meal substitute, but the consistency was more liquidy than solid/chunky. I think i'll try not blending the crushed tomatoes and 1/2 the beans next time. Good flavor. Might make again.

Chicken Cordon Bleu II

Amazing. I think this has been my husband's favorite--I'm a new cook and he's a tough critic. I followed the directions with these modifications: -sauteed the breasts (which i didn't hammer out but cut in halves since they were so big) in butter first--for about 15 minutes -then stuffed breasts with cheese and ham, brushed with 2 raw eggs and bread crumbs, added sauce to dish and baked for 25 minutes -used cream vs. whipping cream--was still great -used almond meal instead of flour for the sauce -*used Pinot Grigio, pretty good flavor Will definitely put this on my cooking STAPLES list!

Delicious Ham and Potato Soup

Garlic-Lemon Double Stuffed Chicken

REALLY tasty. Use a long, shallow baking dish, even if you halve the recipe. I used a 9x9 and the juices made it too soppy. Hubby said it was my best dish yet, even so!

Romano Chicken

This was amazing. Crispy/juicy/textured in just the right way. Admittedly, I substituted quite a few things: chicken thighs for hammered boneless chicken, mozzarella/goat cheeses for Swiss, herbs de Provence for paprica, fresh rosemary for tarragon, and instead of the microwave I cooked it in the oven at 350-375 for about 45 min. Really easy and really yummy! A nice variation from the typical boring chicken dish. I'll have to try the microwave next time in a rush.

Ultimate Green Beans

This was amazing. New family staple. Maple bacon gave it some good punch and a dash of sweetness. Plus I used canned green beans instead of fresh (taking out the need to add water to steam them) and it was still an amazingly tasty and still healthy dish! Props!!!
