Seven Layer Taco Dip

I add jalapenos (2-3) to the green pepper (make sure they are not wet) and omit the black olives . I also use hot salsa and "spicy" (lol) taco seasoning and "spicy" re-fried beans if I can find them(if not, I use fat free). I would recommend seeding the tomato before chopping it and use "reduced fat" cream cheese (fat free is a MISTAKE!!!!!!!!!!!!!!!!!!!!!!!!). I LOVE this dip though. It's basic, but really tasty. I eat it with tortilla, carrots, or tortilla chips. Additionally, I like a sharp cheese (nothing too milky/bland). Finally...it does get watery after the first day, so presentation may be a concern...If you don't mind, just drain off the salsa/lettuce water :)

I like this. I do always end up changing things to taste (more or less lemon/tahini/salt as I blend it all. My biggest suggestion would be to oil a cookie sheet with olive oil and then cut X hash marks all around the eggplant (I use 2). They should be relatively deep slits,almost like tic-tac-to...only closer (but not so that it falls apart). I always bake it for a longer period, rotating them as I go...I have had the best results when they look shriveled/brown on the outside, on all sides (and that takes longer than 40 min in my oven at 400). It is a good recipe though! I am just particular and want to mimic the grilled/charred flavor..

Grandmother's Buttermilk Cornbread

Homemade Black Bean Veggie Burgers

I like these, but not without alteration. I normally need to add more bread crumbs (Panko) and I always increase the heat with peppers (serranos or jalapenos in addition to the green pepper, plus a liberal amount of red pepper flakes). For the hot sauce, I use Huy Fong sri racha sauce (slightly more) and I probably add an extra garlic clove as well and some chili powder :). I like spicy food though..It does seem necessary to drain the excess water off the onion/pepper/garlic--add the garlic first because it needs the most blending. I also add more salt! Before adding the egg, I taste the veg/bread/bean mix...it needs more salt.

The Best Vegetarian Chili in the World

I honestly expected more. It was good in theory but NOT spicy by my standards (despite those who claim it is "too spicy"..I can't imagine what they consider bland...and I even added extra heat. It was sort of bland and I thought it tasted too much like oregano and bay leaves..I have been vegetarian for 10 years too, so it isn't a dislike of vegetables.
