White Chocolate and Cranberry Cookies

This is one of the best cookie recipes on this site. While I favor chocolate chip cookies with nuts, this cookie makes a festive, original gift and I especially like the cranberry-white chocolate chip combination; it's chewey and delicious. I wrapped a dozen of these cookies up in red cellofane paper and tied the top with a gold bow. It's a pretty, fun, and inexpensive way to let someone know you're thinking of them at Christmas time.

Strawberry Trifle

I made this recipe for a friend and it turned out great. While he liked the proportions, I think I could have used less vanilla instant pudding. Oh and I added blueberries, which added a nice extra zing. The strawberries and blueberries I used were all fresh, as I couldn't have imagined using frozen ones. That probably would have been a nightmare! Yummy, yummy dessert--thanks for sharing :)

Mexican Rice

I used yellow food coloring and went without the saffron. When I realized the taste was suffering, though, I added 2 cubes of chicken boullon and a can of chicken broth. THIS saved the day; the rice turned out excellent and I'd definitely use this recipe again.

Apple Cake IV

This recipe was a big hit when I made it for a friend's birthday. I used three golden delicious apples instead of five, though, and I didn't beat the egg mixture for fifteen minutes (I probably did about five). I will definitely keep it in my "repertoir."
