Tomato Spinach and Basil Soup
This soup is fantastic! I have made it many times, including for some of my friends who are VERY good cooks, and they all asked for the recipe. I always double it and add extra spinach. Then I use a hand blender to puree as much as possible. I added a cup of whipping cream this last time (to a triple batch), and it was ohhh so yummy. I usually don't add any extra fat, except for the milk, and it is a healthy, delicious soup! Never had trouble with curdling milk.

Country Breakfast Casserole
I found this in my inbox on a morning that I had impromtu guests for breakfast. I used the hashbrown idea and it was delicious! Kids loved it, adults loved it. I did use extra eggs (approx 5 extra per recipe) since the pan it said to use was a 11 x 8 and I used a 13 x 9. It took longer to cook than the recipe said, but that was probably due to the extra eggs and that I made a double recipe and they were stacked in the oven. Give it a try!

Green Bean and Mushroom Medley
I make this every Thanksgiving and Christmas - by request - for the last 5 years or so. I reduce the salt, based on other reviews that I read - good idea! Even my kids ask for it. I tried a different green bean dish because I thought everyone was tired of this, and I had several ask why I didn't make this one - so it's back on the menu! Thanks.
