Easy Sausage Strata

This was one of my mom's favorite recipes - I've been using it for over 30 years - we dress it up with fancier ham or cheeses, or prepare it as shown. One optional item on my recipe is a little chopped green pepper, and sometimes a little lightly sauteed onion. It also reheats well. I've made it for large groups (100+) and it's always a hit.

Scalloped Sweet Potatoes and Apples

We don't care for the gloppy sweet of canned sweet potatoes and marshmallows, so this simple recipe fits the bill. Some modifications if you choose: use your traditional apple pie seasonings (nutmeg, cinnamon, maybe a dash of cardamom); avoid overcooking the sweet potatoes - they should be just getting to fork tender (otherwise they overcook in the recipe); Use a firm, tart apple (granny smith/jonagold type); for a little texture, sprinkle some toasted chopped walnuts in the layers or on top; finally, free up oven space and use your crock pot (start high and after a couple of hours, check the tenderness of the apples and reduce to low). (Variation on a recipe in Fannie Farmer Cookbook - my version 1979, original copyright back to the early 1900's).

Cha Cha's White Chicken Chili

Good just as presented with only modest changes for taste. Adjusted the spiciness with only one can of fire-roasted (mild) diced green chiles; didn't use the jalapenos at all. Great way to finish off the last of the Thanksgiving turkey. Rather than stir in the cheese, we just sprinkled it on top.

Colleen's Slow Cooker Jambalaya

It had good flavor, and was easy to put together. But the coloring was a little bland - I think I would be inclined to lightly brown either the sausage and/or chicken before adding it to the pot - just enough to give it a little depth.
