Beef Stew VI

Easy and excellent! My tweaks were using sage instead of rosemary (only because I didn't have rosemary), adding garlic, adding 2 extra cups of water at the end, plus a packet of beef seasoning mix I had on hand for extra flavor. Insanely delicious!!!! This is now one of my go to recipes.

Mom's Zucchini Bread

Excellent!!!! I made 2 loaves and then also made another batch into approx 18 muffins, also excellent with a bit of cocoa powder added (or anything else you might like)!! Delicious!! I also like to use some applesauce in place of one egg and/or a bit of the oil.

Good Old Fashioned Pancakes

Tartar Sauce I

One Bowl Brownies

I love how easy this recipe is--can do it even while holding a clingy 1-year old lol. But the pan really is a tad big for the batter...I like slightly fatter brownies. They taste great though! Right out of the oven my first impression was that they were slightly dry, but after sitting in the container overnight they are delicious. You can also make these into PB brownies by swirling peanut butter right into the batter in the pan before baking.

Asparagus, Chicken, and Pecan Pasta

Delicious! My mother made this at my suggestion, and although she had to buy broccoli instead of asparagus (the store had a bad stock of asparagus), it was simply scrumptious. I was worried the pecans would taste odd in here, but they were very very subtle and were a nice touch. I plan on making it again both ways.

Big Soft Ginger Cookies

This is identical to the Better Homes & Gardens "Giant Ginger Cookies" they published years ago, but they had shortening instead of margarine. Everything else is identical--measurements and all. Their recipe is wonderful. The cookies do harden after awhile though. I'll have to try it with margarine.

Dilly Rye Boat Dip

I can see right away the reason this recipe is rated too salty---celery salt. Beau Monde seasoning CONTAINS celery salt so by adding more separately you're overdoing it. Beau Monde can be found at Giant Eagle in Pennsylvania....I make a WONDERFUL dill dip with sour cream, mayo, dill weed, Beau Monde, CORNED BEEF, parsley flakes, and onion which is divine served with pumpernickel bread cubes. Try that out!

Cheesecake Bars

I improvised a bit on this recipe, but I'll still chime in. My version had crushed pretzels instead of nuts in the crust. I added PB to the filling, and left out the lemon. My version is delicious, the only cons are that the topping & crust don't stay "on" very well, and the filling is just a tiny tad dry. Not really creamy like a cheesecake. But it is still extremely edible! Oh yes, I also doubled the recipe & used a 13x9" pan.

Classic Pecan Pie

I just made the pecan pie recipe out of Southern Living's Homestyle Cooking cookbook which only differs by calling for 1/2 cup marg. instead of 1/3 cup...and I just pulled it out of the oven and it's the most gorgeous pecan pie I've ever seen! It took much longer to bake through than the recipe said, using my mother's oven which may be cool, I don't know. But the crust and pie are flawless. I can't wait to eat it :)

Soft Christmas Cookies

I made a batch of these last night. They sure are delicious, but they are NOT soft unless you're talking about immediately after removing from the oven. The dough was heavenly to work with, so smooth and perfect for rolling. Yum! I just wish they stayed soft. That is the only reason I tried this recipe.

Sweet Potato Casserole II

I made this for the first time for Thanksgiving last week and it was awesome. I used 5 large sweet potatoes, peeled and boiled, so the casserole would not be dessert-sweet (and so I'd have more leftovers!). It was the perfect flavor. The pecan topping provides a great crunch. I'll be making this every year!!

Water Chestnuts Wrapped in Bacon

My mother has been making this appetizer for decades but hers are not marinated, they are topped with barbeque sauce before baking. They are AWESOME. My mouth is watering just thinking about them!

Apple Crumb Pie

I almost never make pies, but was looking for one to possibly use this holiday season....and this one sounded great. I made it last Thursday...and it filled TWO pie shells, and is SO delicious!! I used the raisins & walnuts to make it more unique and I just LOVE the crunch of the nuts in it. The spices are perfect and the pie itself LOOKS so pretty!! Thanks for a great recipe for my collection! I plan to use this one for many holidays to come!!
