Tried this recipe and after reading all the reviews, decided less butter the better and made some of my own variations to the recipe. Instead of using butter to saute, I just used Smart Balance spray to coat the fry pan.
I made my pie crustless to save a few calories. I used chopped onion, spinach (less than the recipe called for, I used only a half a cup cooked down). Because I had seen it used in a quiche at a local diner, I added diced tomatoes for a variation.
Also, I used less milk as I was making it crustless and didn't want it to be watery. I only used a 1/4 cup of mile and 1/2 of fat free half and half to make it creamier.
I really liked the recipe and my Dad really enjoyed the Spinanch (and vegtable) quiche. Said it was better than the one at the local diner. High praise as he loves eating there!
