Buffalo Chicken and Roasted Potato Casserole

This. Was. Fantastic. I followed the recipe almost exactly. Only change was I sauteed the chicken in the leftover sauce just to brown a bit before putting it over the potatoes...then cooked the rest of the way in the oven. Yes, it's a little time consuming, but SO worth it. My husband absolutely LOVED it. He also said it went perfect with a cold beer. :)

Iced Pumpkin Cookies

Just WOW! These are completely delicious. The only thing I did differently was use 3/4c white & 3/4c brown sugar (instead of all white) and 1.5tsp cinnamon with 1.5tsp pumpkin pie spice (instead of 2tsp cinnamon with nutmeg & cloves). The glaze is wonderful & perfect on the cookies. Definitely a keeper!

Brown Sugar Meatloaf

By far my favorite meat loaf...and my family agrees. We line the bottom of the pan with bread slices to soak up the grease...and we put the brown sugar/ketchup mixture over the top while baking. I also omit the ginger. It's fabulous! We make it regularly!

Black Bean Spinach Pizza

Eggplant Parmesan II

For someone (me) who has never even purchased an eggplant, nor cooked one, this was a very tasty dish! I thought I'd give it a try b/c I'm looking for more vegetarian dishes and this had a high rating. My family (even my kids) thought it was very good. The eggplant was cooked well and the overall dish had a great flavor. I took others' recommendations and sweated the eggplant slices with salt, then rinsed and continued with the recipe, following all steps just as written. Very good - will keep this recipe!

Beer Butt Chicken

FANTASTIC! This was excellent. I cooked a 6.5lb chicken in the oven on 350 for about 2 hrs. Everyone loved it. Great flavor!! And so easy!

Sausage Casserole

Exactly what I was looking for: simple to put together and delicious! Made it a day ahead and cooked the next morning. I added diced red and yellow peppers with the onions and cooked them with the sausage. Perfect for brunch for a group!

Harvest Rice Dish

Amazing! Used a bag of 1/2 wild 1/2 brown rice and cooked according to the directions, using veggie broth instead of water. Followed directions for the onion/mushroom/cranberry mix just as stated. Omitted the almonds (didn't have any). Absolutely fabulous. We will definitely be having this again soon!

Chicken Tikka Masala

Delicious! I left out ALL of the salt and cut the cayenne pepper to one tsp. It had just the right kick. I probably could've left the cayenne at 2 tsps and probably will next time, but other reviewers had me fearful of the heat. Otherwise, I followed the recipe exactly...marinating for 1.5 hours. We served over rice. My husband LOVED it. Full of flavor!

Five Ingredient Ice Cream

Delicious! I doubled the recipe & split it into to containers to freeze -- added choc chips to one. Took much longer than 4 hrs to freeze to a good "ice cream" consistency...but it was fantastic. Great flavor! So incredibly easy!

Tomato Chicken Parmesan

We loved this! Easy, too! Definitely pound down the chicken to a thinner size. I baked it for about 20 min (10 min per side) then put it together in the dish with the sauce. I added provolone & 4-cheese blend for the last 5 minutes. I removed the chicken to plates, tossed pasta in with the sauce and served it on the side of the chicken. The whole family loved it!
