Wonderful Margaritas

These were excellent margaritas! I used regular Squirt because the grocery didn't carry the diet, and it worked fine! Everyone loved them & I will definitely be using the recipe a lot in the future! So EASY!!!

Chocolate Chip Pudding Cookies

These cookies are excellent...and the texture the day after is perfect & soft! I used 1/2 chocolate & 1/2 white chocolate chips & I even added a tablespoon of instant vanilla-flavored coffee, which gives just a hint of coffee flavor! I think you can really play around with the flavors you use with the pudding! Also, cook them until they are just about done, but not quite...they will stay so soft the day after!! THANKS!!!

Chicken Enchiladas I

Very, very good. An easy dinner using some leftover chicken we had on hand. I was curious about how the parsley & oregano would taste in a mexican dish, but it was really good. We omitted the water...the filling seemed thin enough. Thanks...this is a keeper!

Fabulous! Probably the best pumpkin pie recipe I've found. Not too strong and not too sweet. My family LOVED it. This will definitely be my standard pumpkin pie recipe!!

Restaurant Style Chicken Nachos

Excellent! I used a can of Rotel tomatoes, drained and sprinkled on top instead of the plain tomato (my husband loves spicy foods - so this added a great kick). Will definitely keep this recipe - perfect for football day or poker night!

Sugar Cookie Icing

OREO® and Fudge Ice Cream Cake

Very, very good. A good suggestion if your fudge filling is too thick - add a bit of milk to the mixture before mixing in the chopped oreos - just to get it to spreading consistency. Made this for my husband's birthday and he absolutely loved it.

Brown Sugar Meatloaf

By far my favorite meat loaf...and my family agrees. We line the bottom of the pan with bread slices to soak up the grease...and we put the brown sugar/ketchup mixture over the top while baking. I also omit the ginger. It's fabulous! We make it regularly!

Eggplant Parmesan II

For someone (me) who has never even purchased an eggplant, nor cooked one, this was a very tasty dish! I thought I'd give it a try b/c I'm looking for more vegetarian dishes and this had a high rating. My family (even my kids) thought it was very good. The eggplant was cooked well and the overall dish had a great flavor. I took others' recommendations and sweated the eggplant slices with salt, then rinsed and continued with the recipe, following all steps just as written. Very good - will keep this recipe!

New Year's Day Black-Eyed Peas

My husband, who usually doesn't like black-eyed peas, ate 3 helpings! We loved this recipe. I used a can of diced tomatoes and a can of chicken broth replacing some of the water. Definitely a keeper!

The Best Chicken Salad Ever

I was pleasantly surprised by this. So easy and very tasty. I suppose it's the salad dressing/cole slaw dressing instead of mayo made a big difference. I chopped the celery very tiny b/c I'm not a huge fan of chunks of celery - but I like the flavor it adds. This will be my standard chicken salad recipe from now on.
