Tuscan Chicken

This was exceptional. I used kalamata olives instead of black olives and browned the chicken a bit in olive oil before baking. (i cut out the last 10 minutes so as not to overcook). Very quick and easy.

Curried Carrot Soup

Loved the soup! I used prepackaged peeled baby carrots (2# bag)to save time and effort. Really cuts down on the prep work. Holding out a few carrots to chop and add to the puree gives more texture. And i did add salt and cracked pepper.

Pleasant Pork Chops

I rely on these recipes because i'm a vegetarian. I just cook them - don't taste them! My husband really raved about this dish. The only thing I changed was to use red wine instead of beef broth. Served them with baked, buttered acorn squash.

Rhubarb Stir Cake

What a great combination...EASY and GOOD! I used frozen rhubarb - other than that i didn't alter anything. It was really very good - especially warm.

Cinnamon-Curry Tuna Salad

REALLY UNUSUAL - and very good! I found it was better the next day after the flavors had saturated. The thing I don't really like about tuna is the fishy taste and there is no fishy taste with this recipe!!

Chocolate Pretzels

the recipe just did not work for me. the chocolate never melted - it just burned. soooo, i used the microwave instead of the oven and that really did it. i used waffle shaped pretzels and put the chocolate in the middle and set the microwave for 1 minute. i used another pretzel on top to make a sandwich and cooled them in the fridge. these were great.
