Winter Melon Meatball Soup

I am from Japan and we have different ways of cooking Winter Melons. However, being in the US, I decided to try this Chinese version. I changed the recipe slightly by substituting the cilantro with minced green onion, omitted sugar from both the meat balls and the soup, and omitted garlic from meat balls. I also added Chinese soup bouillon (do not use American soup stock because they use different spices) and sake in the soup to add more taste, added sliced fresh Shiitake and frozen taro potatoes (satoimo in Japanese) in the soup. The result was delicious. My son who does not usually like vegetables (if Winter Melon is considered a vegetable) ate two servings. I boiled the cut Winter Melon and the frozen taro potatoes for 10 - 15 minutes and drained the water before putting them in the soup stock because I like softer melon and potatoes. I will definitely make this soup again.

Blueberry Pie

I just had rave reviews from my colleagues for my blueberry pie. It was my first time to bake blueberry pies and the pies were good. It was very easy, too. The only thing was one of them got over-baked when I baked it for 50 minutes as specified in the recipe. I have a convection oven. I baked the other one for 40 minutes which seemed to be adequate. So if you have a convection oven, you may want to watch your pie closely around after 40 minutes.

Christmas Eve Beef Stew

It was OK. Nothing spectacular. I like barley so I added too much and it sucked all the liquid from the stew. That was probably why it was OK.

Prime Rib

Very easy and tasty. Made this for Thanksgiving because we do not like turkey. The only complaint was the price of the prime rib, which is not the recipe's fault. I will make this again.

Vicki's Hush Puppies

I made this recipe with green onion instead and added a few tablespoons of milk because there were some feedback that hush puppies were too dry. They turned out good. My husband said they were sweet, but he ate quite a few anyway. I like sweet hush puppies and this recipe suits my taste. Next time, I will try to make this with onion. I will probably decrease the batch size in half because I have a small family and there were too much left over.

Amusement Park Cornbread

I love this sweet cornbread. I made it in a 8" pie plate and it turned out just fine, although it took a little longer to bake than specified in the recipe. The only thing is I need to be really careful not to eat too many pieces. I will definitely make this again.

Roast Chicken with Rosemary

Great roast chicken. I smothered the chicken with margarine and seasoned inside and outside with paprika and Garlic Garlic from Tastefully Simple, sprinkled dried oregano and placed it in a covered clay baker. Then I did nothing until the chicken was done. I kept the chicken in the covered baker for about 15 minutes before serving. The flavor of rosemary was strong and the whole house still smells like a roast chicken. This is going to be my regular recipe when I have a craving for roast chicken.
