Ken's Texas Chili

This chili was excellent. I made only a few minor modifications. When cooking hamburger I added 1 large to medium white onion and 1 Jalapeno pepper. Then after it had been simmering for 30 min I added 1 6oz can of Tomato Paste, and simmered for another 30 min to thicken. The chili was a huge success, made it for a football party and it didn't even last until halftime. Bon Appetite

Rempel Family Meatloaf

Taco Seasoning I

Amazing Ribs

This was fantastic!! The only change I really made was that I only used 2 slabs of baby back ribs (4.67lbs). For the beer I used New Belgium 1554 Black Ale.(YUMMY!!!) For the BBQ sauce I used "Best Carolina BBQ Meat Sauce" from this website. I now have a rib recipe that I will use EVERY TIME!!

Best Carolina BBQ Meat Sauce

YUMMY!!! I made this exactly as it stated in the recipe. I served it with "Amazing Ribs" from this site. It's a very nice change from the norm for a midwesterner. This would be great with chicken as well. Kudos to Andy!

Southern Pulled Pork

This was fantastic pulled pork. It was seriously so tender that when I went to take it out of slow cooker it fell apart at the touch of a tong. I would agree with a few other people that it needs bbq sauce. I used olive oil instead of butter. I added a Jalapeno with the onion and garlic. I used 2C of water and 1 (14.5 oz) can of beef broth. Other people commented about the amount of liquid. I found that it didn't matter, as I strained the liquid off. I also added a tsp of hot sauce. I left on high for 6 1/2 hours, then added 1 bottle of BBQ sauce on low for 30 min. I made "zesty coleslaw" from this site. I then piled bbq and slaw on top of kaiser roll and got my eat on! I will witout a doubt make this again.

Zesty Coleslaw

OK, so this was pretty good. I did make a couple of major changes however. I took Pauldis advice and used sour cream for the salad dressing and I used a chipotle mayo instead of regular. There is no doubt that I will make this again the next time I have bbq. I made this with "Southern Pulled Pork" from this site and made a sandwich. You better like horseradish if you are going to make this. Also I didn't find that it was to saucy as some people have eluded to. Maybe the changes helped, who knows. Cheers and good eating!

Bourbon Whiskey BBQ Sauce

This was excellent sauce. I am a fan of spicier sauces so I kicked up the amount Chouloula I used to 1 TBSP and added red pepper flakes. I let it sit for 2 days and then made Amazing Ribs from this site. Great combo.

Penne with Chicken and Asparagus

I was pleasantly surprised at how this turned out. I took the base recipe and followed bizycooker's advice. I chopped the asparagus into 1 inch pieces and put into boling water for 5 min. I then used a slotted spoon to remove and added my pasta(only 12 oz) for cooking. I cut the chicken into small pieces and sauteed in evoo with 2 cloves of garlic and 1 shallot. When the chicken was cooked I added lemon juice, 1/4 C of Cream Cheese and 1/4 C of Chicken stock. When the cream cheese melted I added a splash of milk. I reduced for 2-3 min. When I tossed chicken and sauce with pasta I added a handful of freshly grated parm.

Cajun Chicken Lasagna

I used Johnsonville New Orleans stlye Sausage. I cooked chicken for 6 min then added sliced sausages for 3-4 min. I used a whole red onion, a whole red pepper and 1 Jalapeno along with 3 celery stalks. For the Alfredo sauce I used 2 15oz jars of Bertolli Garlic Alfredo sauce. 2 C of Provel cheese. Pretty solid dish and not alot of labor involved. A fun different way to prepare Lasagna.

April's Roasted Red Pepper Cheese Ball

This was a hit at Christmas dinner! I made just a few minor adjustments. I added 2 tbsp of hot sauce, some fresh cilantro and a dash of liquid smoke (JUST A DASH). Rolled in freshly chopped parsley the night before and served the next day.

Bronco Burger

I will start by saying that I made these in smaller portions. I made 3 out of 1 lb ground beef. I added 1/2 C jalapenos, 1/2C onions. Threw both into the food processor. I used 3 pieces of cooked bacon crumbled into beef. 1 T Cholula, 1 t minced garlic, 1 T Worcestershire and 1 t liquid smoke. Grill on preheated high grill for 8 min per side. Serve on grilled Texas toast.

Burrito Pie

I used 1.5 lb of ground beef. After cooking the onions, a jalapeno and garlic I added a package of taco seasoning. I used diced tomatoes with Lime and Cilantro. Subbed a can of enchilada sauce for taco sauce. Follow recipe. Cook for 10 min. Top with crushed tortilla chips and bake for 10 min more. Let stand 5 min. Top individual servings with chopped green onion and sour cream. Quick easy dish to prepare,

Corned Beef and Cabbage

By no means is this the "perfect" corned beef and cabbage recipe. but it may be the perfect slow cooker Corned beef and Cabbage. I made exactly as recipe states except, I substituted Guinness for water. I think I used 4 total to cover the meat. 9 hours later, wah lah, St Pats excellence.

BBQ Chili Pasta

I would consider this a healthy, homemade version of hamburger helper. It was easy to make and very kid friendly. Not the most gourmet meal, but much healthier than the preservative filled stuff in a box.

Potato Skins

Good Stuff! The Gouda and Pepperoni are a nice change from bacon and cheddar. Also dousing the potatoes with hot sauce when you add toppings adds great flavor if you like spice.

Dad's Leftover Turkey Pot Pie

This reminded me of childhood, except without freezer burn and the tin pie plate. Quick and easy and the kids both asked for seconds. Only modification was addition of cubed white potatoes.
