RWOP Finalist: Shrimp Corn Chowder

This recipe is delicious. I cut the recipe in half and it still made alot - we ate it for three days! I used the entire can of cream of potato soup even though I cut the recipe in half because I wasn't sure what I would do with the rest of the can. That was a mistake, since I don't think the cream of potato soup added anything to the recipe at all - there were plenty of potatoes already. I will leave it out entirely next time, but may try cream of celery soup in the proper amount of 1/2 can (since I was halving the recipe.) For convenience I used the refrigerated diced potatoes which worked fine and organic vegetable broth in place of the shrimp stock as that is what I had on hand. I also chopped the entire scallion. This recipe could probably be spiced up a little more, but that is personal preference. Still 5 star worthy. I will definitely make this again and fool around with it.

Feta Cheese Turkey Burgers

These are delicious! Many turkey burgers I have made have been dry, tough, just not appealing. These are very moist - my entire family loves them. We have them at least several times a month. Thank you for reinventing the turkey burger!

Baked Zucchini de Provence

We really enjoyed this. I followed the recipe exactly but used my pastry brush to brush on the olive oil rather than drizzle it for more even coverage. Would never have thought of adding olive oil to the bread crumbs to crisp them up. Easy and delicious!

Tofu with Pork and Cashews

This was the first time I attempted to make a tofu dish, and the entire family really enjoyed it. The only changes I made to the recipe as written was to double the sauce, and increase both the chopped green onions and the cashews to 1/2 cup, which I stirred directly into the sauce before serving. We will definitely be making this again!

Saucy Chicken and Asparagus

My family really enjoyed this. I did not precook the asparagus, and I substituted cream of asparagus soup for the cream of chicken soup and parmesan cheese for the cheddar cheese. I just mixed the parmesan into the sauce, rather than sprinkling on top. I used a little more curry powder than called for - just my personal preference. We will definitely be making this again!

Aunt Millie's Broccoli Casserole

We loved this! Didn't change a thing, with the exception of using regular cheddar cheese instead of American. Our college-aged daughter was home and commented several times on how delicious the broccoli casserole was. I even think I saw her eating it cold!

Kalua Pig in a Slow Cooker

Absolutely delicious - definitely a keeper! A much lighter smokey flavor than the pork I have been served at Hawaiian luaus, which actually makes it more versatile. I can think of dozens of recipes to use this pork in! My husband had his in a soft taco the first night, suggested using it in enchiladas or taquitos, and I used it along with some of the leftover broth to make Saimen Noodle Soup the following night. (Another delicious hawaiian recipe we recently enjoyed in Kuaui.) I followed this recipe as written, using white Hawaiian sea salt and a pork shoulder roast. You may want to add a touch more liquid smoke if you like a heavier smoke flavor, but we liked the subtleness of the smoke flavor of the recipe as written.

BLT Dip

This went over really well at a family gathering - I had thinly sliced some romaine lettuce around the edge of the serving bowl for presentation, and everybody mixed it in and declared it perfect! (I guess you can't have BLT without the L!)

Slow Cooker Mashed Potatoes

Great recipe - I usually add sliced green onions to the mashed potatoes before adding to the crockpot - just our personal preference - jazzes it up a little bit. I have also had excellent luck doubling or tripling the recipe and freezing portions to just throw in the crockpot to heat up for another meal. Love the ease of that!

Dog Food Dip

Made this for a recent large family gathering - everyone just huddled around the crock pot eating this! It definitely needs the overnight treatment as indicated in the recipe to develop the flavors - it didn't taste like much except ground beef immediately upon making it, but was delicious the next day when reheated. More jalapenos can be added at that time if you want to add more heat. Thanks for a keeper!

Delicious - I followed this recipe using thick sliced cinnamon orange bread from our grocery store bakery and prepared as regular french toast (did not cut into shapes). The entire family loved it - nice delicate orange flavor. Thanks for this keeper!

Whit's Chicken Enchiladas

Absolutely delicious! The only change I made to the recipe as written was to add frozen white corn and sliced black olives to the filling and covering dish for the first half of baking. I would describe the finished dish as more like a chimichanga than an enchilada - (crispy on the outside but not fried like a chimichanga, a definite plus). Will be making these again soon - thanks for sharing!

Holiday Morning French Toast
