I'm a wife, mother, grandmother and employed full-time. When my kids were small I was a stay at home Mom & loved to prepare meals for my family. Now that they are grown & I work full time, I don't have much left at the end of the day for meal preparation so I'm always looking for fast, easy, healthy and great tasting meals.
My favorite things to cook
Lo-Carb meals. It's amazing how your taste change when you cut out sugar and white flour. You get very creative when you don't want to eat the same thing all of the time. I make a great lo-carb pizza.
My favorite family cooking traditions
I love to cook Beans, cottage ham & fried potatoes like my Mom did. The fried potatoes aren't as healthy as I would like so I only make this a couple times a year now. My family loves my Pot Roast, roasted potatoes & carrots. I drizzle olive oil over the roast, potatoes & carrots along with worchestire sauce, garlic & onion powder & my family acts like it's the best thing they've ever tasted!
My cooking triumphs
I can make the best homemade chocolate chip cookies. I have no secret recipe, I simply use the one on the side of the chocolate chip bag. Besides making sure all of my dry ingredients is mixed thoroughly I think the trick is not to let the butter get too soft and always use a cool cookie sheet when baking each batch. This way the cookie doesn't spread or melt too fast making them mushy & thin. They stay firm but soft with a little crunch around the edge. My teenage daughter has tried to bake them several times but she states that even when she follows the recipe on the side of the bag just like I do nothing taste like mine. I let her in on my little secrets. Maybe she'll try them again and succeed.
My cooking tragedies
Quite a few years ago I made some Chicken Stir Fry that even the dog wouldn't eat! I'd say that's pretty tragic!
