Best Ever Muffins

Reviewed: Oct. 5, 2004
Excellent muffin recipe! This is a fantastic base. I only added strawberry jam to the mix, first mixing some into the batter, then adding a little extra and just swirling it, not blending it. Wonderful! To those who are calling this recipe "bland", they are only bland according to what YOU add to it. It is just a base recipe. So blandness is no one else's fault but your very own... Also, I must add, to those who say they followed the recipe "exactly" but the muffins burned, didn't cook, whatever - then you did NOT follow the recipe exactly. The final step specifically says: Bake 25 minutes OR UNTIL GOLDEN. That means it could be more or less time, depending on your oven. I'm not trying to be rude, but some people here were quite rude, in that they automatically blame the recipe submitter before realising it was their own fault. I am eating one of these freshly baked muffins right now, Lori, and they are simply wonderful. Thank you so much for sharing your recipe.

Good Old Fashioned Pancakes

Reviewed: Jan. 3, 2004
These are light, fluffy, and perfect - not too heavy or "airy" - that just makes my family gassy, these are just right. I make these every Sunday now, and I make homemade syrup to go on them (one cup each sugar and water, boiled 5 minutes, add vanilla to taste and pour over the freshly made pancakes - mmmmmmmmm), Definately a keeper in this household.

Chocolate Caramel Nut Cheesecake

Reviewed: Jan. 3, 2004
What an excellent cheesecake! It is perfect no matter what you add to it, but Snickers are great. I have been experimenting and using other types of candy bars, like Caramellos, Aero, and even mini M&Ms, and all the combinations with this cheesecake just can't go wrong. The basic cheesecake this makes never fails. Awesome!

Never-Never Ever-Ever Fail Fudge

Reviewed: Nov. 10, 2003
The key that is missing here is in the preparation. This particular recipe has been in my own family for generations, and it has never failed - providing you follow these particular directions: any seasoned fudge maker will realise those first three ingrediants in the saucepan need to be boiled about five minutes - but no more - and no less. The preparation instructions fail to mention how long it must be boiled. Five minutes is the key. When we allow this fudge to set in our household, we usually refridgerate it until set. Once it has set about an hour or a bit longer, I wouldn't keep it in the fridge permanantly, as it can get hard as a rock if left too long, although some members of my family have left it there and had no major trouble. If you like firmer fudge, leave in the fridge. If you like softer, allow it to set, and then take it out. Good luck. *Also, please do not forget, while it is boiling for those five minutes, do not stop stirring!
