Fifteen Minute Chicken Chili

For the time spent on this recipe, it's pretty good. I changed out the plain diced tomatoes for Hunt's fire-roasted garlic, added some salt, and in addition to the one can each dark red kidney beans I added a can of rinsed black beans. I mashed some of the black beans with a fork before adding so as to thicken the chili. I also just used pre-cooked chicken I had on hand and that worked fine. Easy, tasty, healthy recipe. Will make again. Thanks!

Blue Cheese Dip I

Very good if you like blue cheese flavor. Makes a lot, so it is good for a crowd; if it's your only appetizer, it'll probably feed about 20 blue cheese lovers.

I thought this was a great basic recipe. For the topping, I only used about a teaspoon of salt instead of the whole tablespoon. I skipped the onions, but you could easily and tastily slice some thin red onion to put on the top and I am sure that would be delightful. Thanks for the recipe.

Italian Confetti Pasta Salad

Very tasty and versatile recipe. It does dry a bit when you store it overnight, but that is typical of pasta salads and is easily remedied by adding a dab of mayo to perk it up. I make this all the time because it's so easy and flavorful. One time I didn't have basil on hand and instead subbed dried dill -- worked great and was delicious.

Irish Cream Chocolate Cheesecake

Reese's® Brownie Bottomed Peanut Butter and Milk Chocolate Chip Cheesecake

Decadent and super flavorful. Came out perfectly as per the recipe. Next time, I might try replacing the peanut butter/milk chocolate chips with broken up mini reese's peanut butter cups. Talk about decadent. Tastes as good as anything I have had in a restaurant. Definitely a keeper!

Triple Berry Crisp

So yummy and very easy. I took the advice of others and upped the berries to 2 C. each. I only used 5 T. of sugar and it was fine, as the berries were ripe and flavorful. I made the dough in the food processor and it turned out great, and there was a lot of it. Definitely a keeper.

Cake itself was delicious. Didn't care for the icing -- not enough tang since it is cut with the whipping cream. Will make again, but with a tangier icing.

Creamed Spinach with Onions and Bacon

I thought it tasted fine, though have no frame of reference because I had never made bacon before. The recipe looks daunting, but it is quite easy if you follow it closely. The guest who really likes creamed spinach had two servings.
