We loved this at my house. Even my 2 and 5-year-old kids ate it! I put 2 uncooked chicken breasts in the slow cooker instead of cooked chicken and shredded it an hour before serving. For the liquid portion of the recipe I used all chicken broth except for 1 cup of water. I also rinsed a can of black beans and added them with the other ingredients. My tortilla strips didn't turn out well (maybe I didn't put enough oil on them) so I just used tortilla chips and that was easier and extremely tasty. Finally, we ate the soup with diced avocado, sharp cheddar cheese, and sour cream. I can't wait to eat leftovers!
