Spicy Orange Bison Balls
Make sure you read the part about needing to simmer for an hour. I was timing dinner to be ready at a certain time so I actually simmered mine on medium-low for 35 minutes or so. They still turned out great. I served over jasmine rice with the juices since mine did not reduce all the way. I also had an Asian veggie medley on the side. My 4 and 7 year old really like it. I used sweet Asian chili sauce and I used 1 cup of orange juice and 1 1/2 cups of water in place of the 3 cups of water. It was quick and easy to prepare and a tasty way to use my ground bison that I had purchased. Definitely a keeper!

Baked Buffalo Wings
This is a great wing recipe and I hate to fry anything so it was right up my alley. I shook the wings around in the flour mixture and refrigerated for 30 minutes to an hour. I then baked the wings without the sauce for the 45 minutes. When they came out of the oven I dip them in the hot sauce/butter sauce and place them on a serving dish. They have a lot of flavor and are not soggy. At a popular wing place where waitresses where orange shorts they always dip the fried wings in sauce AFTER cooking. Their wings are delicious and now so are mine!

Slow-Cooker Chicken Tortilla Soup
We loved this at my house. Even my 2 and 5-year-old kids ate it! I put 2 uncooked chicken breasts in the slow cooker instead of cooked chicken and shredded it an hour before serving. For the liquid portion of the recipe I used all chicken broth except for 1 cup of water. I also rinsed a can of black beans and added them with the other ingredients. My tortilla strips didn't turn out well (maybe I didn't put enough oil on them) so I just used tortilla chips and that was easier and extremely tasty. Finally, we ate the soup with diced avocado, sharp cheddar cheese, and sour cream. I can't wait to eat leftovers!
