Best Buttercream Frosting

Wow, this was sweet! I can't believe some reviewers said it wasn't overly sweet. This is the sweetest frosting I've ever had. The method worked perfectly. The milk thickened up, and the butter mixture wasn't grainy. I let it mix in the stand mixer for about 15 minutes, and it was very creamy. However, it didn't really spread nicely. It kind of separated on the cake.

Scottish Oat Scones

I'm giving this recipe 4 stars because it tasted good, but it didn't taste like scones. It didn't have that flakey sconey texture, probably because the butter is melted instead of being cut in. Tasty breakfast item - yes. Scone - no.

To Die For Blueberry Muffins

These were good, but not great. Definately not "to die for." The texture was good, but the flavor was lacking. Perhaps some vanilla or brown sugar is needed.

Hearty Breakfast Cookies

These were very good, and not as dense as I thought they would be. I forgot to flatten them before baking, and they did not spread at all. Now I have cookies shaped like scoops of ice cream!

Overnight Coffee Cake

OK, I admit I did not make it the night before. I made the whole thing in the morning, but it still turned out great. Very fluffy; not as dense as most quick breads. I did not have any nuts, so I used chocolate sprinkles on the top.

Brown Sugar-Rum Pound Cakes

Wow! Every bit as good as the other reviews said it would be! The texture was perfect...moist and not too dense. We ate it warm out of the oven, but I bet it will be better the second day. I halved the recipe and baked it in a fluted bundt pan. It only took about 40 minutes to bake. The consistency of the batter was a little weird - much fluffier than regular cake batter. I was a little worried about it, but it turned out great.

Chinky's Mango Bread

This was just ok. Very moist and good texture, but you couldn't taste the mangoes. I made it into muffins. I added a dash of nutmeg, so they tasted like spice muffins. When my husband saw the mango strings in them, he accused me of hiding squash in the muffins! (I'm always trying to sneak veggies into his diet.)

Paula's Bread Sticks

These were great. Crunchy on the outside and soft and chewy inside. I added garlic powder, oregano, basil, and parsley to the dough. I used the stand mixer and did not double the recipe. I kneaded by hand for aobut 10 minutes, and let the dough rest for 10 minutes before shaping.

Chocolate Chocolate Chip Nut Muffins

After reading the other reviews, I took a few liberties with this recipe. First of all, I cut the recipe in half, but I still used a whole egg. I cut all other ingredients in half, except the sugar. I used only a scant half cup of sugar so that it wouldn't be too sweet. I made 4 regular muffins and 12 mini muffins. I used paper liners and sprayed them with Pam and didn't have any trouble with sticking. The batter was very thin. The chips sank to the bottom of the regular muffins, but remained dispersed in the mini muffins. In the future, I might thicken the batter to keep the chips dispersed by substituting sour cream or maybe even cream cheese for the milk. The muffins turned out not-too-sweet and pefect with my morning coffee.

Boiled Bagels

These were just ok. I used about half whole wheat flour, and I used the broiling option. The outsides were glossy as promised, but the insides were not the consistency of bagels. They were just heavy, dense bread.

Oatmeal Whole Wheat Quick Bread

I've been looking for a lower calorie baked good for breakfast, and this was perfect. The unbaked dough tasted a little bland, so I added a dash of cinnamon. I did not process the oatmeal. I baked it in a 9x9 pan, and it took about 15 minutes. I cut it into 9 squares, and ate it topped with just a touch of apple jelly.

Autumn Cheesecake

This was pretty good. I followed the recipe almost exactly. I did take the time to arrange the apple slices in circles on the top of the cake. Then I sprinkled the cinnamon/sugar over them. I thought the apples got a little chewy. I did not double the filling because it was just for my husband and I. I would double it if I were making this for a crowd. It was a little thin.

Beer Butt Chicken

This was very good, but I was not blown away by it. I was expecting something great after reading all the reviews, but it was just good. Very moist meat, crispy skin. The paprika was a little overwhelming. I used a gas grill and it only took 1.5 hours for a 4 pound bird.

Caramel Corn IV

This turned out really good. I doubled the amount of sauce as suggested and it was just right. I used a large roasting pan and a cake pan. Next time, I will use a stock pot. I think it will be easier to stir in a high-sided pan. I stirred every 5 minutes for about 15 minutes. I used Teflon coated bake ware and utensils and had no problems with sticking.

Emma's Belgian Waffles

I've been searching for the perfect waffle recipe for awhile, and these come pretty close. I like the fact that they don't use yeast. They don't take too long to make in the morning. They are light and crispy on the outside. I'd like them to be a little fluffier, but this is probably the best you can do without yeast. My husband thought they were the best waffles I've ever made, but I think I can still improve a bit.

Super Duper Zucchini Muffins

These were really good. However, I didn't think there was enough liquid in the recipe, so I doubled the milk. They turned out very light and fluffy. I didn't have nutmeg, so I doubled the cinnamon instead. I used a zucchini that I picked out of the garden this morning. My husband claims that he hates zucchini, so I didn't tell him that I used it in the muffins. He thought the muffins were great!

Dark Chocolate Cake I

I was very disappointed with this cake. I made it for my husband's birthday because he loves dark chocolate, and I wanted it to be perfect. I followed the instructions to the letter. The cake was not chocolatey! I liked the fact that it was not too sweet, but it was bland. You couldn't even taste the chocolate. The only thing that saved it was the fact that I used a very chocolatey frosting. If I were going to make this again, I would use twice as much chocolate. But I'm not going to make this again due to another problem: the cake didn't rise! Since no one else mentioned this, I guess I must have done something wrong. My layers were flat as pancakes. When I saw the huge amount of batter, I thought I might be able to split the layers and make it a 6 layer cake. But each of the 3 layers was too flat to split.
