Awesome Slow Cooker Pot Roast

Reviewed: Apr. 25, 2012
I make this recipe and get rave reviews. Instead of water, I use 1-1/4 cups of beef consomme. I place potatoes, baby carrots, chopped celery, and coursely chopped onion on the bottom of the slow cooker and place the roast on top of the vegetables. Time & money saving tip: After the roast is cooked and it is removed along with a little of the gravy/liquid, I move the leftover gravy and most of the veggies into a pot, add frozen peas and a can of green beans (drained) and cook over medium heat on the stovetop, I thicken it using a little flour and milk mixture and adding it to the pot, stirring until desired thickness is reached. After serving the roast for dinner, I cut up some of the left-over roast and add it to the pot and voila!...I have beef stew for the next night...My kind of recipe!

Chicken Stir-Fry

Reviewed: May 1, 2012
When I saw this recipe, it had 777 ratings...so I knew it had to be a lucky choice. I used different veggies than the original calls for (mushrooms, zucchini, bell pepper, and onion), but only because that is what I had available. The nice thing about this recipe is that it's flexible. The chicken I mariated EXACTLY to instructions and wouldn't change a thing about that. I did add about 2 tablespoons of brown sugar and a dash of red pepper flakes at the same time as the bouillon. Easy and amazingly delicious...My kind of recipe!

Chili Rellenos Casserole

Reviewed: Jan. 20, 2013
I am eatting this as I rate it! So delicious and easy! I did make a few adjustments recommended by others: I used an 8x8" casserole dish, used a 12oz can of evaporated milk (and no regular milk), 3 eggs instead of two, cooked it for 25 minutes, then topped it with El Pato brand tomato sauce with jalapenos (using just part of a small 7-3/4oz can), and cooked it for 15 minutes more. I used diced ortega chilies (because that is what I had in the pantry). I highly recommend this for it's taste and how quick and easy it was to make. This is a good option for breakfast,or...as a lunch or dinner side dish or main course...My kind of recipe!

Spinach Cheese Manicotti

Reviewed: Mar. 3, 2013
Easy to make and delicious...My kind of recipe! The only change I made was to use one 26oz can of spaghetti sauce (instead of two). It was very saucy and more than enough. Two would've been way to much. I will definately make this again.

Brown Sugar Meatloaf

Reviewed: Mar. 3, 2013
I made this today and it was great. I have been looking for the perfect meatloaf and this is it. I did change one thing, I used plain bread crumbs instead of saltine crackers. Flavorful and fast...My kind of recipe!
