Almond Strawberry Salad

I love salad and this hit the spot. I followed directions exactly except I had no strawberries. It was delicious. I served it with pork tenderloin. Will definitely make again.

Balsamic Vinegar and Olive Oil Dressing

I made this using 2 tbsp extra virgin olive oil, 2 tbsp. balsalmic vinegar, 2 tbsp water. Everything else the same. It was delicious and so simple. I previously made a balsalmic vinegrette that called for multiple ingredients. It was good but time consuming. I believe this may be even better!

Basil Chicken Strips

Oh my! This is delicious. I added salt and pepper to the flour mixture and left the rest of the recipe unaltered. Boy oh boy is this scrumptious. And so quick and simple.

Spicy Garlic Lime Chicken

This was absolutely the taste I was looking for. I made as directed except I omitted the 2 teaspoons of garlic at the end. I served these as Baja tacos by placing the shredded chicken in soft corn shells and topping with pico di gallo and lettuce. I loved the taste of this chicken. perfect balance of spices and so versatile.

Our Favorite Balsamic Vinaigrette

Janet's Rich Banana Bread

Just pulled this out of the oven and it looks and smells delicious. After cooling and turning onto the wire rack had to sample while still warm. WOW! So good! I stuck with the recipe except I used softened instead of melted butter, mashed instead of slicing bananas. I also added 1 teaspoon baking powder and dash of cinnamon. This is so moist and I will definitely be making this again.

World's Best Lasagna

I made this almost exactly as written sans fennel seed. I swapped out water for red wine. Other than that kept recipe authentic. This is absolutely the best lasagna I have ever eaten. My family loves it and my son tells everyone his mom makes the best lasagna. It is a little time consuming so I double the recipe and freeze some. It is a good sauce that goes well with everything. Tastes even better the next day and after freezing. My search for a good lasagna recipe ended here.

Roasted Butternut Squash Soup

I made this today and it was so good! I skipped sauteing the squash (to save a step) and roasted whole x 1 hour at 400 degrees, cut in half and peeled easily. Used a few dashes of ground cinnamon since I didn't have cinnamon stick. After adding the broth to the sauteed onions, celery, and carrots I simmered x 30 minutes. This gave the broth a rich flavor. Used immersion blender and sprinkle of nutmeg to finished soup. This will definitely be served again and again.

Eggplant and Tomato Casserole

I made this tonight and it was good . The only thing I did differently was lightly brush olive oil over the eggplant, then layered without frying the eggplant (I was in a hurry and trying to cut a step out). I really enjoyed the combination of the tomatoes, eggplant, and balsamic vinegar. The breadcrumbs toasted up nicely on top and gave the needed texture. I topped with grated Parmesan cheese but I don't think it would be necessary.
