Hot Mexican Spinach Dip
I have been making this dip for years and it has always been a hit (I do use hot salsa, 4 blend cheese and half&half). Yesterday I made a triple batch for a party that ended up being cancelled at the last minute. While the dip freezes well, I didn't want that much in the freezer. I kept out some (sorry no measurements here although about 1/2 the original recipe) added to cooked hot pasta and added cubed cooked chicken (a bag of tyson's cooked chunks) Topped with crushed tortilla chips. Yummy easy dinner

Spinach, Artichoke and Crab Wontons
Great recipe. I made the first time as listed and enjoyed. The next time I was in a bit of a time crunch with a last minute dinner party. Added the filling to pre-made phyllo cups and just broiled to heat through. Perfect for the last minute appetizer

Cherry Chicken Lettuce Wraps
These were a hit with the family and the other teenage boys our son had staying over. I followed most of sherrybeat's recommendations. I also added a half chopped red onion into chicken/mushroom/water chestnut mix. Doubled sauce (splitting half honey and half soy sauce) garlic powder and some red pepper flakes (to taste). Instead of chicken breasts, I used a rotissere chicken, shredded and chopped. This cut the prep time to almost nothing.
