Green Chile Chicken Soup

Reviewed: Feb. 17, 2005
I came across this recipe because I was looking to recreate Carrabba's Sicilian Chicken Soup. While this wasn't exactly a match, I tried it anyway. I have to report we both really liked it (my husband really, really liked it - he had two bowls for lunch!). It's nice, creamy and super easy to make. We both like that it has a bite to it. Speaking of bite, definitely don't skip on the chiles - it makes the soup. And don't be shy with them, I put in just the half cup, but a little more wouldn't have hurt. Thanks for the recipe!

French Toast I

Reviewed: Apr. 1, 2005
I followed this recipe loosely because I didn't have the nutmeg or vanilla. So to make up, I used some brown sugar instead. I used thick pieces of french bread, melted some butter with my brown sugar and mixed that with my egg, milk & cinnamon. It was really wonderful, thanks for posting! P/S Medium-high started to burn my toast, so I reduced to medium. That just might be my stove, but everyone watch their toast just in case!

Spicy Grilled Shrimp

Reviewed: Apr. 4, 2005
Made this dish for the second time this weekend for a party of 12 20-somethings. They all loved it! The only change I made was doubling the amount of garlic..it really cut down on the shrimpy smell & added a bit of kick. Thanks for posting it!

Sausage Brunch Casserole

Reviewed: Apr. 4, 2005
Another 5-star rating here! The only change was using sharp cheddar cheese instead of mozz cheese and it was great. I imagine just about any cheese would be wonderful and would be a fun way to change up the recipe. Thanks for posting!

Tasty BBQ Corn on the Cob

Reviewed: Jul. 5, 2005
Loved it! I used the ingredients but just eye-balled the amounts. I also boiled the corn instead and added the butter topping while it was still warm. Thanks for posting this great recipe...I'm going to put it into rotation now!

Hot Corn Dip

Reviewed: Oct. 25, 2005
Wow, I just loved this recipe! I did cut everything in half as it was just my husband and me, so I only used one can of yellow corn. I thought it tasted great that way, so I imagine with the white corn it's even better. I didn't soften the cream cheese, but did dice it and stirred halfway throught the cooking time. I have to say the dip got better with every bite. I will definitely make it again, thanks for posting!

5 stars all the way! It really is so easy and super delicious. I gave them as holiday treats and I've already been asked for the recipe by two people. Thanks for posting it!

Michelle's Blonde Chicken Chili

Reviewed: Feb. 6, 2006
I printed this recipe over three years ago but just found it in my recipe folder. I whipped it up and can I say WOW! Until this one, I had yet to find a great WCC recipe. But this one is my fav now -- I just love the green chili flavor! Also, the second time I made it, I accidentally added too much chicken broth and realized it also would make a flavorful chicken soup. Just replace the beans with any bite-size pasta or rice. Thanks for posting this great recipe!

Christmas Punch

Reviewed: Jul. 3, 2006
I made 60 servings of this punch for a July 4th BBQ we had this past weekend. While I found it good tasting, I have to give it only 4 stars because it wasn't quite flavorful enough. I had two others try it before I served it and they all felt it was missing something. After some tweaking, I realize that Sprite or other lemon-lime drink worked better than the (IMO) bland carbonated water. Thanks for posting the recipe though, I will definitely use it again!

Broccoli Salad II

Reviewed: Jul. 3, 2006
I used this recipe, but changed it up a little. I didn't add the bacon and instead included shredded cheddar cheese. I made the dressing according to the recipe and it turned out wonderful. Thanks for posting this great recipe - it's a new favorite of mine!

Acorn Squash

Reviewed: Jan. 21, 2008
Simple and yummy recipe! I had something similar - but far more complex - at a Thanksgiving dinner once and loved it. I'm glad I found an easier alternative. As the others did, I nuked mine for 5m in the microwave and cooked in the oven for 30m at 400. Instead of butter I used margarine. Turned out wonderful! Thanks!

Greek Pasta Salad I

Reviewed: Jun. 30, 2008
My friend and I looked for a last-minute pasta salad recipe to serve for dinner. We both immediately pointed to this one and sent our husbands to the store with an ingredient list. Three hours later, this dish was the rave of our dinner! We only made a few changes due to a sparse market - we didn't include tomatoes or feta, used tri-color rotini and added shredded parmasan upon serving. Still great! Love this recipe and many thanks for posting it.

Super Grilled Salmon

Reviewed: Jun. 30, 2008
Really liked this recipe! I actually dislike salmon - it's too strong of a flavor for me. But since my husband loves the fish, I cut half the salmon for me and used this recipe. I marinated it for only 4 hours (and had to use dark brown sugar) but it still had lots of flavor. And when I made the sauce (flour instead of cornstarch & it worked just fine) it made it even better. I'll definitely make this again!

Quick Mediterranean Pasta

Reviewed: Jun. 30, 2008
This was good! I actually made it for my finicky 14m old who is hating everything right now. She loved it! I used fettucini noodles so she could grab them and added a bit of butter and parmasean for an added taste. She really liked it! The only reason I gave it 4 stars instead of 5 is due to the dryness - you hate to add too much oil, but the bread crumbs really soak up that moisture. Thanks for the recipe!

Curried Honey Mustard Chicken

Reviewed: Jul. 22, 2008
I made this recipe last night and enjoyed it. The only change I made was substituting EVOO for the butter and don't feel like it adversely affected the dish whatsoever. I thought it would be more fun to cut the chicken into bite-size pieces, so I sauteed them in a pan with the marinade. After I got them cooked, I added in a frozen stir-fry veggie mix. I served this dish over white rice. We all enjoyed this slightly spicey dish and I'd probably make it again.

Asian Lettuce Wraps

Reviewed: Jul. 22, 2008
My 14-yr old niece and her mom made this for my entire family at our summer vacation (14 of us ranging from 15m to 75). The overwhelming response was "amazing"! There wasn't one person who didn't love this recipe, including my own picky 15m old. I gave her just the meat mixture and rice and she shoved it down voraciously. Most of my family used the bib lettuce to make the wraps, but a few of the guys ate it over white rice. I think using ground pork or even sliced chicken would be great and I plan to try that myself. Very versatile recipe!

Buffalo Chicken Dip

This is my favorite dip ever! I make it easier on myself by dumping all the ingredients in my crock pot and let it do the cooking. Just be sure you rinse off the chicken before you use it.

Summer Squash Puffs

Reviewed: Jun. 15, 2011
If you like hushpuppies, you will love these! They were awesome! We have an abundance of squash and was a bit sick of grilled and sauteed. This was just what I wanted. I followed the directions except used self-rising instead of all-purpose and cut the salt by at least half. Added a bit of garlic powder and omitted the onion because I didn't have one. We will make these again this weekend for a party. Can't wait!

Mom's Zucchini Bread

Reviewed: Jun. 19, 2011
This was great! I used self-rising instead of all-purpose, powder and salt. Grating takes forever, but it was worth it since I got TWO loaves. I made one with walnuts, and one without for my allergic daughter. Next time I will try some of the add-ins. Thanks!
