Blueberry Buckle

I made this recipe as stated and I thought it was great. The only thing I did differently was bake it in a 9" springform pan. It was definitely best fresh out of the oven.

Chex® Muddy Buddies®

I gave this recipe five stars because Muddy Buddies the way they're meant to be are five stars, hands down. But I must give this warning: the recipe says to use any variety of Chex, but I do not recommend using Wheat Chex. I tried Wheat in an effort to offer something healthy to the snack and they did not turn out nearly as well. They were super crunchy and frankly just tasted too healthy. I will ONLY use Rice Chex from here on out.

Baked Potato Soup V

This recipe was good, and my husband especially loved it, but it was just okay for me. I baked the nine potatoes that the recipe called for and then just stopped adding them when I reached the consistency I was looking for. The first time I made it I used nine potatoes, the second time I only used six and a half.

Breaded Chicken Fingers

These definitely didn't last long on my table. I made some honey mustard sauce to dip them in and they were gone in no time. They were very good and the recipe was fairly easy, but I'll try some other chicken strip recipes before I settle on this one.

I feel like it takes me forever to make this recipe, but it's really really good. A whole onion is way too much for my liking- I don't use any more than a half. But everyone I've ever made this for has loved it.

Creamy Rice Pudding

I had the strangest craving for rice pudding when I was pregnant (strange because I truly do not like rice pudding) and so I found this recipe and whipped it up. It is delicious! I have long since had my baby, but this recipe continues to be just as yummy as it was the first time.

Banana Sour Cream Bread

This banana bread was so good! It was very moist and, unlike other reviewers, it was not too sweet for me. I got three 9x5 loaves out of it, and baked them at 325 degrees to make up for the added volume. They came out just perfectly!

Beef Enchiladas II

I've made these enchiladas three times for dinner guests and multiple times for my hubby, and always get rave reviews. I have found that Lawry's enchilada mix is the best. I tried a generic brand one time and I couldn't believe how different they tasted- and not for the better. (Don't forget to add 6 oz. tomato paste to your shopping list- the sauce packet will call for it!) We like an extra cup of cheese over top and serve with a big dollop of sour cream. I always make homemade creamed corn and a fresh salad to go with this meal.

Easy Blueberry-Lemon Parfait

This was really yummy and even prettier to serve. I blended a spoonful of Cool Whip into the yogurt. It gave it a smoother texture and was a little stiffer, so the top layer of yogurt didn't run down over the blueberries, hiding those pretty layers. The layer order went yogurt, cookie crumbs, blueberries, repeat. I served these at a brunch baby shower and put them in little punch glasses with a mint leaf on top (that's my picture with the recipe) and they just looked so classy sitting at everyone's place setting.

Swink's Chili

This chili was SO GOOD! I've made it two times now and the first time I followed the recipe exactly, except that I added a teaspoon of cumin. It was delicious. My only complaint was that it was a little soupy and would have been too runny for chilidogs. So the second time I used a half cup water instead of two and it was just the right dog consistency.

Baked Ziti I

This is really good- I served it for several of our friends and they all loved it. I put the sauce directly on the ziti, like other reviewers suggested. Some also said that the sour cream seemed out of place and gave it a weird flavor- I totally disagree. I think the sour cream is what makes it and helps to set this dish apart from all the other pasta dishes. Oh, and if anyone else was wondering (as I was), ziti is actually just large elbow macaroni. Enjoy!

Shepherd's Pie VI

My hubby and I love this recipe! I use two cups of frozen peas, carrots and corn instead of doing the cooked carrots, just to save on time, plus it adds some nice color to the dish. I also add a big spoonful or two of sour cream to the mashed potatoes to make them a little creamier. Great comfort food and a good way for the kids to get their veggies!

Party Punch V

Yum! I was skeptical because it just seemed so simple, but I was pleasantly surprised. It's perfect as a brunch punch. I brought it to a baby shower and had several people ask for the recipe. Just for fun, I like to make ice cubes out of muffin tins and freeze a slice of strawberry and a mint leaf inside. If you make a dozen of these they float really nicely in a punch bowl.

Fudgy Chocolate Fondue

This may have been the best chocolate fondue I've ever had. I'm not proud to admit it, but I actually licked the pan clean when my husband wasn't looking. I followed the advice of others and brought it to a boil and then let it boil over low heat for about five minutes, stirring constantly. We used bananas, strawberries, pound cake and marshmallows, and my husband and I can't wait to pour it over vanilla ice cream!

Perfect Berry Shortcakes

I only used the shortcake part of this recipe and they were so good! I just dropped the dough in little flattened balls to save time. The egg white and sugar were a really nice touch too. Sprinkling two tablespoons of sugar over six cakes felt like a lot of sugar, but it wasn't at all once they were baked. I served it with homemade whipped cream and fresh strawberries. Yum!

Dirt Cake I

Yum! I left the butter out when I made this- it just didn't seem necessary. The first time I made it I put it in a galvanized flower pot with artificial flowers and gummy worms on top. The second time I did it for a Halloween party and put it in a wide-rimmed glass bowl. I did a whole graveyard scene on top with Milano cookies as gravemarkers, with RIP written in black frosting.
